Crispy Wonton Rotisserie Chicken Salad. Say hello to your new favorite salad – a fresh, colorful mix of crisp greens, vibrant herbs, rotisserie chicken, creamy avocado, crunchy cashews, and plenty of crispy wontons. It’s all tossed together with my go-to toasted sesame, orange, garlic, and ginger turmeric dressing. A perfect balance of savory, sweet, and a little spicy—plus, it’s no-cook, quick to throw together, and beyond delicious.

I’m definitely back on a salad kick! It’s funny—after a stretch of busy cooking days (and weeks), I find myself getting into a groove and falling completely in love with the recipes I’m creating. Right now, I’m all about fresh, vibrant dishes for spring and summer.
This week, I got my hands on the prettiest fresh herbs—and even a few dahlias! Having all that beautiful spring produce and flowers around has sparked a new wave of inspiration in the kitchen.
When I spotted some gorgeous Thai basil, I immediately knew that I wanted to make this salad.

It’s one of my favorite easy meals to pull together, especially when I have my homemade rotisserie-style chicken ready to go. With the chicken prepped in advance, this salad comes together almost effortlessly.
And let’s talk about the dressing. A turmeric-ginger vinaigrette with a bright pop of sweet orange. I recently discovered how magical turmeric and orange are together. They bring such fresh, vibrant flavor.

Just the basics! A cutting board, a good knife, a jar for the dressing, and a big salad bowl!

This is one of the yummiest dressings. It’s a mix of toasted sesame oil (this adds such a good flavor), honey, orange jam, fresh orange juice, vinegar, ginger, garlic, turmeric, and sesame seeds.
I prefer to mix everything together in a glass jar and then season with salt and black pepper. Always use pepper with turmeric, it helps the nutrients and flavors release even more! The pepper helps to activate the benefits of the turmeric!
If you do not like spicy food, you can omit the hot sauce and/or chili pepper.

This step is not technically a part of the recipe. You can choose to buy store-bought crispy wontons or make your own.
If you make your own, you just need oil for frying, wonton wrappers (or use egg roll wraps), and sea salt. I fry the wonton strips in hot oil, then sprinkle with sea salt and sometimes lime zest. These are so yummy!

Next up is the salad. I use shredded green cabbage, shredded kale, and shredded purple cabbage. Then add the shredded rotisserie chicken, Thai basil, cilantro, and jalapeños.
I like to add the dressing, and then top the salad with avocados, cashews, and more dressing. Oh, and of course – so many fried wontons, they are delicious!
This is currently one of my favorite salads to keep on rotation. It’s the perfect salad for spring and summer. I can’t wait to add corn to this too! YUM!

Such a great recipe! The dressing is so fresh and unique – love the addition of the orange. I served with air-fried salmon instead of chicken because that’s what I had on hand. Came together so quickly with store bought wontons and pre-shredded coleslaw mix (along with half a head of kale.) Simply amazing!

I made this salad tonight and it was a huge hit! It is quick to prepare, pretty and colorful, and has the perfect balance of sweet and salty. The citrusy dressing is refreshing and summery and the crunchiness of the wontons and cashews compliment the mixed greens and chicken. Dear T: Seems like a huge amount of toasted sesame oil (expensive, too). If so, any substitution for that oil? Is that the correct amount of oil? I must say the recipe sounds wildly delicious, as most of your recipes do time and time, again. Thank you.
Hey Judes! Yes, that is the correct amount. What about using melted butter or olive oil? Would either work for you? I do love the sesame oil for flavor, but I am sure olive oil is fine to use as well!
