Creamy Tuscan White Bean Lemon Soup. My family’s favorite quick and easy Italian-style soup. Spicy Italian chicken sausage mixed with onions, shallots, garlic, and Italian seasoning. All cooked together to create a wonderfully creamy and spicy soup. Add carrots, celery, sun-dried tomatoes, a couple of cans of white beans, and fresh baby spinach. Then, just before serving, add a bit of cream, parmesan, and lemon juice to balance the spice and give a touch of creaminess to this delicious, hearty winter soup. Ladle into bowls and top each with extra parmesan and fresh parsley. It’s just the yummiest!

Ever since Christmas Eve, we’ve had some of the snowiest weather. It’s been heavy winter days filled with chilly temperatures and a good amount of snow. At this point in the winter, I’m still loving this cozy weather.
It always inspires me to create some of my favorite recipes of the year. And from the looks of the numbers, some of your favorite recipes too.
I guess we can’t deny that there are a lot of us who really do enjoy a cozy meal!
I’ve been on a major soup kick. I feel like I have new ideas every single day! But when I created this simple, spicy Tuscan-style soup, I knew it was something special.
The flavors, the colors, and the creaminess were all indications that this soup would be delicious. It turns out that this has become one of my favorite soups – and my family’s too!
I blame a lot of this on the spicy Italian chicken sausage. It’s one of my favorite Whole Foods purchases. I usually pick up a pound from the meat counter. If you’re lucky, they’ll make it for you, and the seasonings are just perfect!
I love the spicy sausage in the creamy broth. The addition of lemon just before serving creates the perfect balance. Such a yummy winter soup!

Ingredients
Special Tools
None! All you need is a nice big Dutch oven/soup pot. This recipe really is so easy!

Step 1: the sun-dried tomatoes
Start with the sun-dried tomatoes. I love using a jar of oil-packed sun-dried tomatoes. Not only are the tomatoes delicious, but I also use the oil from the jar to cook the chicken. The oil is always seasoned, so it adds even more flavor. Just make sure it’s extra virgin olive oil.
Most people will discard the oil, but you must use it! It adds a lot of flavor to recipes.
Step 2: cook the sausage
Add the oil from the sun-dried tomatoes to a Dutch oven. Add the sausage and onions and brown them. Then mix in the shallots, garlic, carrots, and celery. Mix in the Italian seasoning too.
Let the veggies soften up a bit.

Step 3: add the broth and simmer
Next, add the broth and simmer until all the veggies are tender and the soup start to really smell yummy!
Step 4: finish the soup
Now add the spinach, the sun-dried tomatoes, and white beans. Mix in the cream, parmesan, and lemon, cooking until warmed throughout.
The cheese will melt into the creamy broth.

When you’re ready to eat, divide the soup between bowls and top it with extra parmesan and freshly chopped Italian parsley.
And, of course, no bowl of Italian soup is complete without some crusty bread (I particularly love a loaf of warm ciabatta) or my Nonnie’s homemade beer bread. Both are great with this soup!

One of my all-time favorite soups, ever!! We went from sunny 75 degrees to the next day, a cool 56 degrees, and tons of rain and flash flood warnings. This was the perfect answer! Sooooo, yummy. Quick and easy enough to send the adult kids and grandbabies, come for soup, a first fire, and card games. 🙂 Thank you, great combo!
Hey Kymore,
Amazing! Thanks a bunch for trying this recipe and your feedback, so glad it was enjoyed!
Loved this soup for all! So much flavor. Will definitely make it again.
Hi Lisa,
Fantastic! I’m so glad to hear this recipe turned out well for you!
Thanks for giving it a try and your comment! Have a great week ahead!
I love this recipe. I have mostly moved away/distanced myself from HBH, but this is a recipe I cannot quit making. It’s so, so flavor-rich and (moderately) healthy. It’s also filling enough to be a meal on its own.
Hey Kristi,
Love to hear it! I appreciate you making this recipe so often and sharing your input! Have the best week ahead! xT
Will definitely save this recipe for repeat. So flavorful and satisfying. I added red pepper flakes, since I had mild chicken sausage. Also used a jar of sun dried tomato pesto and added after sauteeing the sausage onion mixture. Followed the recipe for all the rest. Don’t skip the lemon, it adds a brightness. Thanks for your creativity!
Hi Linda! So glad to hear you enjoyed it, and love the tweaks you made with the red pepper flakes and sun-dried tomato pesto, that sounds super flavorful! And yes, totally agree, the lemon really brings it all together with that perfect pop of freshness! Thanks so much for giving it a try and for your kind words! xT
This has become one of my favorite soup recipes! I use bone broth for extra protein and flavor and kale instead on spinach because every time I make it I eat it for days after and wanted a heartier green to maintain some texture when reheating. I usually let it simmer for quite a few hrs before adding the cream and lemon as well. Simply the best. Thank you Tieghan!
Hi Sasha! Aw thank you so so much! I’m so happy to hear you’re loving this soup! Thanks so much for taking the time to leave a sweet comment! 🙂 xT
I haven’t tried this yet, but was thinking I might use sumac instead of lemon. The lemon could curdle the soup unless you temper it properly. Sumac, on the other hand, is easy peasy to sprinkle in.
Can’t wait to try this!
Thanks for sharing your feedback, Veda. I hope you love this recipe! xx
The lemon never curdled the soup.
I made this for my family tonight. No one really liked it… nothing wrong with it but it just didn’t go over well with the kiddos. Maybe it would be better with a different Italian sausage, but the chicken sausage we used didn’t give it as much flavor as I’d have liked.
Hi Maggie,
Thanks so much for trying this recipe and sharing your feedback, so sorry to hear your family didn’t love it! xx

I absolutely adore this soup. The lemon just perfects it. Chefs kiss. So good. I did not use the cream or make it spicy and it was still amazing. Thank you!
Hey Brianna,
That’s awesome!! Thank you so much for making this recipe and your feedback, love to hear it was enjoyed! xx
Loved the soup! I made my own sausage from ground chicken, and didn’t add parmesan at the end, because I am watching my sodium intake. Loved it and will be making it again this weekend.

I live in Canada…..I do not have a zip code so I cannot print a recipe because it is forcing me to create a Jupiter account !!!!!
Hi Sandi,

This soup was absolutely delicious.
Hey Sheryl,
Fantastic! I appreciate you trying this recipe, love to hear it turned out well for you! Enjoy your day:)
Wow, I love this soup…it’s a new favorite! It has amazing flavor and packed with healthy ingredients.
I’ve made it twice now and made a couple minor modifications.
I think the 2 TBS of Italian seasoning is a little overpowering; I used 1 TBS.
I do not add the cream, I really don’t think it needs it and just makes it a little lighter. I also
serve with grated parm and do not add to soup.
With any soup I make, I add a lot more veggies than called for….more carrots, more spinach, etc. I used 4 spicy chicken house made sausages from Whole Foods…delicious! Don’t be afraid of the entire jar of sundried tomatoes (only a little of the oil though), it adds a great flavor and I think it’s what makes this soup a little different.
THANK YOU TIEGHAN…..great recipe!!!
Hey Sarita,
Happy Monday! So glad to hear this recipe was a hit, I appreciate you making it and your comment! xx
