Each light pink berry-filled cookie is lightly iced with a cream cheese strawberry icing. These cookies do not disappoint. Each sweet bite is perfectly chewy, layered with fresh berries, and topped with a deliciously creamy icing – so good!

It’s strawberry cookie day here at HBH today!! It’s a good ole’ happy kind of day! I know that’s a little cheesy, but just looking at these light pink cookies makes me a little happier. The pink color is so fun!

I’ve been looking forward to writing and sharing these cookies since I made them last week. I love them, they’re easy, cute, soft, chewy, and oh-so-yummy. Plus, they’re fun for springtime and Easter too!

My energy is obviously up today and I blame these cookies. It’s not all the time that recipes turn out naturally cute without any added effort! So we just love that!

Just like last year, and the year before, March brings me some much-needed inspiration recipe-wise. It’s the start of spring. We have St. Patrick’s Day just around the corner, and then Easter and Mother’s Day too.

All are fun events that center around food! With spring coming up, strawberry is at the top of my mind. I LOVED my strawberry cupcakes from last year so much, I wondered how I could turn the flavors into a cookie.

My very first attempt at these worked beautifully. That almost never happens ya’ll. Again, we ALL really love these cookies, and I’m pretty sure you’ll love them too. Plus hopefully, you’ll also have fun making them!

I knew I wanted these to be easy, but also to have incredible strawberry flavor – and REAL strawberry flavor. So many strawberry desserts have everything but real strawberries.

Like my cupcakes, I used strawberry jam and freeze-dried strawberries in these cookies. The first step is to blend the dried strawberries into a fine powder. You can do this in a food processor or blender. You’ll use the strawberry powder in both the cookies and the icing.

The rest is so simple. If you’ve made a basic cookie, you’ve got these covered.

Using a standing mixer, beat the butter with sugar, then drop in an egg and some vanilla extract. Next, the dry ingredients: mix in the flour, baking soda, some of that strawberry powder, and a little salt too. Next, add in high-quality strawberry jam. I like to use a thick jam, which I would recommend you use as well. The one I used was sent to me (sorry, I forget the name!). I love that it has no added sugars, just strawberry puree (I’ll try to figure out the name).

Mix, mix, mix and you have strawberry sugar cookie dough. Nothing to it.

Bake them into drop cookies, which means use a cookie scoop to scoop, drop, and bake.

For the icing, in a small bowl, mix cream cheese with sweet sugar, more of that strawberry powder, and vanilla.

You don’t have to make the icing, the cookies are wonderful on their own. But the icing makes these cookies REALLY good. I definitely recommend it.

Lightly dip the cookies into the icing and place on a wire rack and now you’re totally done. Well, I also recommend decorating with a sprinkle of strawberry powder.

So freaking cute and fun! Perfect cookies to bake for both spring and summer, and especially for upcoming Easter and Mother’s Day. They’re pretty hard not to love!

  • 1. In a blender or food processor, process the freeze-dried strawberries into a fine powder.
    2. Preheat the oven to 350° F. Line a baking sheet with parchment paper.
    3. In a large bowl, beat together the butter, granulated sugar, and vanilla until combined. Beat in the egg. Add the flour, baking soda, 1/4 cup strawberry powder (save the remainder for the frosting), and salt. Beat in the strawberry jam.
    4. Roll the dough into rounded tablespoon size balls and place 2 inches apart on the prepared baking sheet. Bake 8 minutes. Remove from the oven, rotate, and tap the baking sheet on the counter 1 time to flatten. Bake another 2-3 minutes or until the cookies are just beginning to set on the edges. Remove from the oven and let the cookies cool on the baking sheet. They will continue to cook slightly as they sit on the baking sheet.
    5. To make the icing, mix all ingredients in a bowl with 3-4 tablespoons strawberry powder. Add additional milk to thin, as needed.
    6. If desired, dip each cookie in the icing. Let set or enjoy! These are wonderful – iced or not! Store in an airtight container for up to 5 days.

    I have not apply frosting yet.
    Are they supposed to be soft in the center?

    These came out fantastic! I read the reviews and was a bit hesitant, the only thing I listed to was adding the extra 1/4 cup of flour, but I don’t think it was necessary. When making these like any other cookie you need to cream the butter and sugar together for 3-5 minutes, thats the only reason I can think of why so many people were complaining of runny gooey cookies. I also added in the jam with the other wet ingredients before adding the dry so that way the batter did not get over mixed and have a tougher cookie. I popped them in the freezer after I scooped them into 2 tbsp balls and let them sit for about 30 minutes and put them in the oven directly out of the freezer. Frosting came out wonderfully with the exact same look and consistency, they set up but are still slightly soft, but not messy. Would definitely make again! Thank you for a great recipe!

    These cookies were delicious! After reading some of the comments and other recommendations I used 1.5 sticks of butter, added the extra 1/4 cup flour and chilled the dough and they turned out PERFECTLY! The icing was also amazing and added some extra yummy goodness to the cookies….will definitely make these again!

    I absolutely loved these!! Some people said they tasted like strawberry ice cream. Before adding the jam into the dough, I thought it looked a tad dry, but the jam fixed my initial opinion/problem. The dough was a very interesting consistency. It had some bounce to it? I’m thinking bc of the freeze dried strawberry powder? Either way, they turned out perfectly based on the baking instructions.

    The ingredient measurements are off I used 1 stick of butter and the extra flour as suggested but they still were a greasy flat mess. 3 cups of freeze dried strawberries is way too much. The Trader joe package makes about 1 cup powder so you will have left over

    Love your savory recipes but have not had luck with your deserts!

  8. Is there something that I’m missing? I followed this recipe as directed and they were flat and greasy. Is it the jam? Or needing to cook/freeze the dough? Either way I was completely disappointed with how these turned out.

    I was super excited to make these as part of the gift for the hostesses of my baby shower, but I sadly had the same issues as the other commenters. The cookies came out far too greasy and spread into a goopy mess. As directed to other commenters, I chilled the dough, used a little extra flour and followed the directions but these just did not turn out for me. The icing ratio also did not set for me like it looks in the pictures. I was expecting more of a Royal icing finish, but the icing did not set. Pretty disappointing, but I’ll say that the flavor was great.

    Bottom line is that this recipe has so much potential, but is in definite need of a re-work!!

    My mom and I have been looking forward to making these cookies since the recipe was first published on Instagram… and they sure did meet all of our expectations! They are the perfect summer cookie. They were relatively easy to make. We had all the ingredients “on hand,” which is always greatly appreciated.     I was excited to try this recipe but after reading the comments it seemed like there was way too much butter…so I reduced that in half. I baked the first batch according to instructions but they came out very crispy…so I reduced the heat & baked for 8 mins total & that worked fine. I spooned the icing on top (rather than dip the cookies) but 24 hours later it still hasn’t set up. I used Trader Joe’s freeze dried strawberries processed into powder with a Vitamix…but it was too gritty in the icing…my husband swore it was chunks of salt. I wouldn’t say this recipe is a fail because I made changes…but I don’t think I’d try it again.

        1. I’m honestly not sure because it is working just fine for a lot of people. If your dough seems too soft, I would add the 1/4 cup of flour and chill the dough!
