This simple Sheet Pan Sticky Ginger Soy Chicken and Broccoli is about to become your new go-to meal. Easy homemade, extra saucy chicken, tossed in a gingery, sweet, spicy, and extra sticky honey soy sauce. Serve with steamed rice and broccoli – cooked right alongside the chicken – for the easiest sheet pan dinner. A delicious, fun, take-out style dinner made at home – and much healthier too – that’s great any night of the week!

It doesn’t look like it, but when you read this recipe, to me, it screams retro. Retro, like a recipe your grandma would have made way back in the day. This is totally something my Nonnie would have made on repeat.
It’s EASY, which we of course love. My Nonnie was a real pro at creating delicious dinners that took very little effort on her part. She knew her time was better spent shopping with me!
Her secret was using ingredients that did double the work. She would incorporate a lot of store-bought seasoning packets and sauces to add flavor. She’d also take shortcuts whenever she could. But regardless, her dinners were always delicious, and I know she’d fully approve of this recipe.

So what is the “retro” secret ingredient here? A little bit of ketchup. It gives this sticky sauce added body, flavor, and sweetness.
I know it’s not a new concept by any means, but I don’t often use ketchup for cooking. I usually reserve it for dipping my french fries. But I’m now sold on using ketchup in sauces. Sounds odd, but wow, it’s so delicious.

This recipe is so simple and straightforward. Grab some broccoli and chicken, I love to use a mix of chicken breasts and thighs. My family prefers chicken breasts, but I think thighs always add flavor. They give just the right amount of fat to keep chicken from drying out. I find a mix is always nice!
Arrange the chicken and broccoli inside a baking dish. I use a smaller sheet pan with sides. Ideally, you want to use something a little smaller than a 9×13 inch baker. This will allow the sauce to better thicken around the chicken. A sheet pan with sides is perfect!

Now the sauce. Mix equal amounts of honey, ketchup, and tamari (or soy sauce) together. Then add tart pomegranate juice, garlic, ginger, and chili flakes. Mix and pour the sauce over the chicken.
Bake until the sauce thickens slightly around the pieces of chicken and broccoli.

At the end of cooking, I like to switch the oven to the broil setting and get the chicken caramelized on top. Just watch closely, the broiler can really work FAST.
I was shocked at how well the timing of everything ended up working out. Nothing fancy here, just simple cooking, but very delicious.

Serve the sauce, chicken, and broccoli over steamed rice with plenty of green onions, and if you’re into it, pomegranates too. I love using them because they add color and juiciness.

Could I use frozen broccoli??

We made the oven version and it tasted great. But the sauce was very thin, any recommendations to get it thicker?

I love love love all of your recipes but this one was a total fail. Cooking in the instant pot made it watery and tasteless. The broccoli is straight mush. It looks nothing like the picture. If I were to make this again I would cook the chicken separately and make the sauce over the stove and combine everything when done

Any substitutions for the ketchup? Hubby can’t eat acidic foods but dying to try this

I’m not confident the pressure cooker version was tested, so stick to the oven! Using the insta pot directions gave me watery overcooked chicken and soggy broccoli 🙁 Two stays for flavors, but otherwise a big miss.

I thought this had good flavor; didn’t substitute any ingredients but added arrowroot powder to the sauce, cilantro and sesame seeds on top. The sauce thickened more as it cooled.
Oh and turned convection oven temp down to 425.

Overall, pretty good, but could use a few tweaks to make it great!
1. 450 degrees was a bit too high for my oven. My chicken was burnt and the sauce was burnt in places. You know your oven best… so adjust the temperature as needed. I should have been more mindful about checking the sheet pan at certain intervals but time got the best of me.
2. Too much ketchup. The sauce was very sweet. I would add less ketchup next time.

This was absolutely delicious. Only substitution I did was hot honey instead of regular honey, because I like a little spice! I also added sesame seeds to the top. One of my favorites so far!

After reading quite a few reviews saying the sauce turned out too thin in the oven, I decided to make it on the stovetop instead. I still cooked the chicken thighs and broccoli on a sheet pan in then oven, but made the sauce over the stove to make sure I could get the right consistency. It turned out perfect! I love all the flavors, especially the added touch of pomegranate on top. Will most definitely be making this again. 🙂
Oh, I forgot to mention, I cooked the thicken thighs and broccoli for 25 min. on 400.

Too much ketchup
450 is too high for chicken. It burns the tips and dries out the chicken.
