It doesn’t look like it, but when you read this recipe, to me, it screams retro. Retro, like a recipe your grandma would have made way back in the day. This is totally something my Nonnie would have made on repeat. 

It’s EASY, which we of course love. My Nonnie was a real pro at creating delicious dinners that took very little effort on her part. She knew her time was better spent shopping with me! 

Her secret was using ingredients that did double the work. She would incorporate a lot of store-bought seasoning packets and sauces to add flavor. She’d also take shortcuts whenever she could. But regardless, her dinners were always delicious, and I know she’d fully approve of this recipe.

So what is the “retro” secret ingredient here? A little bit of ketchup. It gives this sticky sauce added body, flavor, and sweetness.

I know it’s not a new concept by any means, but I don’t often use ketchup for cooking. I usually reserve it for dipping my french fries. But I’m now sold on using ketchup in sauces. Sounds odd, but wow, it’s so delicious.

The details

This recipe is so simple and straightforward. Grab some broccoli and chicken, I love to use a mix of chicken breasts and thighs. My family prefers chicken breasts, but I think thighs always add flavor. They give just the right amount of fat to keep chicken from drying out. I find a mix is always nice! 

Arrange the chicken and broccoli inside a baking dish. I use a smaller sheet pan with sides. Ideally, you want to use something a little smaller than a 9×13 inch baker. This will allow the sauce to better thicken around the chicken. A sheet pan with sides is perfect!

Now the sauce. Mix equal amounts of honey, ketchup, and tamari (or soy sauce) together. Then add tart pomegranate juice, garlic, ginger, and chili flakes. Mix and pour the sauce over the chicken. 

Bake until the sauce thickens slightly around the pieces of chicken and broccoli.

At the end of cooking, I like to switch the oven to the broil setting and get the chicken caramelized on top. Just watch closely, the broiler can really work FAST. 

I was shocked at how well the timing of everything ended up working out. Nothing fancy here, just simple cooking, but very delicious.

Serve the sauce, chicken, and broccoli over steamed rice with plenty of green onions, and if you’re into it, pomegranates too. I love using them because they add color and juiciness.

  • 1. Preheat the oven to 450° F. Rub a baking sheet with oil.
    2. Arrange the chicken and broccoli in the prepared baking dish.
    3. In a bowl, whisk together the honey, ketchup, tamari, pomegranate juice, garlic, ginger, and a good pinch of chili flakes. Pour the sauce over the chicken and toss to coat. Bake for 25-30 minutes, until the chicken is cooked through and the sauce is bubbling.
    5. Turn the oven to broil and broil 3-5 minutes, until the chicken caramelizes on top. WATCH CLOSELY, the broiler works fast. Serve the chicken, broccoli, and sauce over bowls of rice topped with green onions and pomegranate, if desired.

Instant Pot

  • 1. Arrange the chicken and broccoli inside the instant pot bowl.
    2. In a bowl, whisk together the honey, ketchup, tamari, pomegranate juice, garlic, ginger, and a good pinch of chili flakes. Pour the sauce over the chicken and toss to coat. Seal the lid and cook on high pressure for 8-10 minutes.
    3. Once done cooking, release the steam. Serve the chicken, broccoli, and sauce over bowls of rice topped with green onions and pomegranate, if desired.

    This was much too sweet to me, and lacked in the ginger flavor. Just felt like it was some sort of barbecue want to be. I don’t think the ketchup flavor was a good compliment to the dish… Unfortunately, I won’t make again.

    I made this in the crock pot without cutting the thighs and let them cook in the sauce on low for 4 hours. Added the broccoli in the last 30 mins and they were still soft. The sauce wasn’t thickening up so I made a little slurry and cranked the heat to high for 30 mins and it became ‘saucy’. Great flavors and plenty sauce for the rice!

    I saw this on Instagram and had to make it. This could have been really good. I liked the initial sauce after mixing it up, but after 18 mins my chicken was overcooked. The size was right. Maybe my oven runs hot. I still broiled to try to at least get the sauce thickened but it just kind of separated and stayed watery. Recipe probably needs a cornstarch slurry. The broccoli still tasted good just wilty.

    I’ll try this again – the sauce is very good! Im going to add more broccoli – we like our veggies here, and 3 cups isn’t quite enough! I’ll also add cornstarch to the sauce – as others have stated, mine was too thin. I do appreciate your work on this – I’ve tried to come up with recipes on my own, and I’m just not creative. I’m grateful for those who are and who share that with others.

    The flavors are robust and it’s delicious….But it was a crazy mess! I highly suggest *not* using parchment paper as the recipe states. The parchment seemed to absorb and bake the sauce into the sheet pan. Everything was stuck to the paper and needed to be peeled off. It was almost comical. However, once that laborious task was finished and transferred to a platter (and sprinkled with black sesame and scallions), it was really good. Also, I found 450 degree oven to be too high. I brought that down to 430. I’ll try it again because it really was super delicious.

    This was just far too sweet and cloying for my palate. Like others the sauce was watery and didn’t thicken. I served it without the sauce and it the chicken was tender and tasted ok. Sorry I wanted to love this but really didn’t.

    I made this in the instant pot and it was easy and quick. Loved the flavor but it was too much cooking time, the broccoli was mush. Next time I will use the oven method. As others commented the sauce was quite runny, I thickened it with a bit of cornstarch. Worth a second try.

    I made this according to the recipe. Flavor was fantastic. I used the pressure cooker directions. I just wished it was thicker and more of a glaze.

    This was fantastic! My teenagers didn’t leave me with any leftovers. We did add a little more crushed red pepper flakes to spice it up. My sauce didn’t thicken as much as I thought it would. I’ll try a smaller pan next time. Thank you for the recipe!

    Yum! Very easy recipe. I tweaked it a little by adding a few other ingredients. I added black sesame seeds 1 T and 1 T of sesame oil. I also substituted roasted ginger spice because I had it on hand. I served it with a coconut basmati rice made with ghee, coconut oil, coconut palm sugar simple syrup, chicken broth, and a whole can of full fat coconut milk. definitely top with green onions. I also added chopped cilantro. Forget take out. This is so much better.

  13. I made this once before and found it bland so I made some adjustments this time. I still roasted the broccoli on a sheet pan, but just added a tiny bit of sauce to finish on the end. Added flavor, and the broccoli stayed crispy. For the chicken, I cooked it in a wok. I also thickened the sauce with corn starch and added a little cayenne and urfa chili for heat. I realize this changes the recipe, but with these adjustments it was a hit the second time around.
