Easy homemade, extra saucy chicken, tossed in a gingery, sweet, spicy, and extra sticky honey soy sauce. It doesn’t look like it, but when you read this recipe, to me, it screams retro. Retro, like a recipe your grandma would have made way back in the day. This is totally something my Nonnie would have made on repeat. 

It’s EASY, which we of course love. My Nonnie was a real pro at creating delicious dinners that took very little effort on her part. She knew her time was better spent shopping with me! 

Her secret was using ingredients that did double the work. She would incorporate a lot of store-bought seasoning packets and sauces to add flavor. She’d also take shortcuts whenever she could. But regardless, her dinners were always delicious, and I know she’d fully approve of this recipe.

So what is the “retro” secret ingredient here? A little bit of ketchup. It gives this sticky sauce added body, flavor, and sweetness.

I know it’s not a new concept by any means, but I don’t often use ketchup for cooking. I usually reserve it for dipping my french fries. But I’m now sold on using ketchup in sauces. Sounds odd, but wow, it’s so delicious.

The details

This recipe is so simple and straightforward. Grab some broccoli and chicken, I love to use a mix of chicken breasts and thighs. My family prefers chicken breasts, but I think thighs always add flavor. They give just the right amount of fat to keep chicken from drying out. I find a mix is always nice! 

Arrange the chicken and broccoli inside a baking dish. I use a smaller sheet pan with sides. Ideally, you want to use something a little smaller than a 9×13 inch baker. This will allow the sauce to better thicken around the chicken. A sheet pan with sides is perfect!

Now the sauce. Mix equal amounts of honey, ketchup, and tamari (or soy sauce) together. Then add tart pomegranate juice, garlic, ginger, and chili flakes. Mix and pour the sauce over the chicken. 

Bake until the sauce thickens slightly around the pieces of chicken and broccoli.

At the end of cooking, I like to switch the oven to the broil setting and get the chicken caramelized on top. Just watch closely, the broiler can really work FAST. 

I was shocked at how well the timing of everything ended up working out. Nothing fancy here, just simple cooking, but very delicious.

Serve the sauce, chicken, and broccoli over steamed rice with plenty of green onions, and if you’re into it, pomegranates too. I love using them because they add color and juiciness.

  • 1. Preheat the oven to 450° F. Rub a baking sheet with oil.
    2. Arrange the chicken and broccoli in the prepared baking dish.
    3. In a bowl, whisk together the honey, ketchup, tamari, pomegranate juice, garlic, ginger, and a good pinch of chili flakes. Pour the sauce over the chicken and toss to coat. Bake for 25-30 minutes, until the chicken is cooked through and the sauce is bubbling.
    5. Turn the oven to broil and broil 3-5 minutes, until the chicken caramelizes on top. WATCH CLOSELY, the broiler works fast. Serve the chicken, broccoli, and sauce over bowls of rice topped with green onions and pomegranate, if desired.

Instant Pot

  • 1. Arrange the chicken and broccoli inside the instant pot bowl.
    2. In a bowl, whisk together the honey, ketchup, tamari, pomegranate juice, garlic, ginger, and a good pinch of chili flakes. Pour the sauce over the chicken and toss to coat. Seal the lid and cook on high pressure for 8-10 minutes.
    3. Once done cooking, release the steam. Serve the chicken, broccoli, and sauce over bowls of rice topped with green onions and pomegranate, if desired.

    This was really good! And easy. I did do the suggestions of 3 T corn starch in the sauce, and sesame seeds afterward. I also used chicken tenderloins, rather than cutting into cubes and cooked the broccoli separately with olive oil and salt on a separate sheet pan. Sauce turned out sticky and yummy!

  2. This was so tasty! I did sub the broccoli for 2 zucchini and a red bell pepper since I didn’t have any broccoli on hand. Also subbed honey for brown sugar for the same reason. I think the veggies may have made the sauce more runny than it was supposed to be but I just added the juice to a saucepan with some arrowroot flour (maybe 2 tsp) and it thickened up perfectly. I used chicken tenders so I was a little worried that it would be dry but it wasn’t at all. I also don’t typically add ketchup when recipes call for it but I gave it a chance and it really was delicious! Loved this recipe and I will definitely make it again with the broccoli and honey (:

  3. I wanted this recipe to work but it was not “sticky” but soupy and a bit sweet. I dont understand how the recipe could be so off. Are they not tested? I am finding the recipes on instagram have problems versus those in the coombooks.

  4. We LOVED this recipe! I used my faux Insta-Pot to cook the chicken thighs and added extra garlic to the pot. I used equal parts of the sauce ingredients ketchup, soy, honey and added some brown sugar and juices some cuties. I went big with chili flakes and cayenne. It only got up to 9° today and we need something to warm us up. Steamed the broccoli with left over ginger stub and garlic in the water and then put everything under the broiler for the special touch. Man, this was easy and delish!! Tip – don’t overthink the sauce. You know what you like – Reduce the ketchup if you are not a fan. I have a photo, but can’t figure out how to upload. It was a pretty meal! This one is going in rotation! Thank you!!!

    Made this tonight with some modifications and it was really good. Great flavors in the sauce and easy to make. I cooked the veggies and the chicken on separate sheet pans to allow more room and added just half the sauce between the pans to avoid it being watery. Then I cooked the other half of the sauce down with a little cornstarch in a pot while the chicken and veg cooked. Topped the dish with the reduced sauce and it worked out well.     I used the instant pot directions and the broccoli was mush and the sauce was soupy. I agree that the recipe needs tweaking. The flavor was good, but I would cook the broccoli separately next time and thicken the sauce.

    This recipe is super easy & tasty!! I used chicken breasts and cut the time down to 20m but chicken still ended up a bit overcooked. Sauce was also super runny so I added it to a pan with a cornstarch slurry and it thickened up perfectly! I enjoy the flavor, but I also really like ginger! If that’s not your thing then I probably wouldn’t recommend it. Otherwise super tasty!!

    The flavor of this recipe was not something I would recommend. I feel so badly stating this bc HBH is my fave, but if you are on the fence about trying this recipe, I would advise against it.

    I cooked the broccoli on its own sheet pan and added about three TBSP of cornstarch to the sauce and about a TBSP of sesame seeds before cooking! It turned out GREAT!

    I love a good sheet pan meal, but I gave it a 4 because I think the recipe needs tweaking. For me, the chicken got dried out, so I think next time I will not cut it into chunks, but rather leave my boneless thighs whole. I thought it was a bit salty, so low sodium tamari would work better for me. I wanted some crunch so next time I will put some chopped cashews on top. I was also skeptical of the ketchup. I know it provided needed acid, but I am wondering if a more traditional rice vinegar or lime juice (maybe 1/4 cup) could be used, and that might take care of the problem some had with it being runny. I know my suggestions really change the original recipe, but it was easy so I will give it another try.
