It doesn’t look like it, but when you read this recipe, to me, it screams retro. Retro, like a recipe your grandma would have made way back in the day. This is totally something my Nonnie would have made on repeat. 

It’s EASY, which we of course love. My Nonnie was a real pro at creating delicious dinners that took very little effort on her part. She knew her time was better spent shopping with me! 

Her secret was using ingredients that did double the work. She would incorporate a lot of store-bought seasoning packets and sauces to add flavor. She’d also take shortcuts whenever she could. But regardless, her dinners were always delicious, and I know she’d fully approve of this recipe.

So what is the “retro” secret ingredient here? A little bit of ketchup. It gives this sticky sauce added body, flavor, and sweetness.

I know it’s not a new concept by any means, but I don’t often use ketchup for cooking. I usually reserve it for dipping my french fries. But I’m now sold on using ketchup in sauces. Sounds odd, but wow, it’s so delicious.

The details

This recipe is so simple and straightforward. Grab some broccoli and chicken, I love to use a mix of chicken breasts and thighs. My family prefers chicken breasts, but I think thighs always add flavor. They give just the right amount of fat to keep chicken from drying out. I find a mix is always nice! 

Arrange the chicken and broccoli inside a baking dish. I use a smaller sheet pan with sides. Ideally, you want to use something a little smaller than a 9×13 inch baker. This will allow the sauce to better thicken around the chicken. A sheet pan with sides is perfect!

Now the sauce. Mix equal amounts of honey, ketchup, and tamari (or soy sauce) together. Then add tart pomegranate juice, garlic, ginger, and chili flakes. Mix and pour the sauce over the chicken. 

Bake until the sauce thickens slightly around the pieces of chicken and broccoli.

At the end of cooking, I like to switch the oven to the broil setting and get the chicken caramelized on top. Just watch closely, the broiler can really work FAST. 

I was shocked at how well the timing of everything ended up working out. Nothing fancy here, just simple cooking, but very delicious.

Serve the sauce, chicken, and broccoli over steamed rice with plenty of green onions, and if you’re into it, pomegranates too. I love using them because they add color and juiciness.

  • 1. Preheat the oven to 450° F. Rub a baking sheet with oil.
    2. Arrange the chicken and broccoli in the prepared baking dish.
    3. In a bowl, whisk together the honey, ketchup, tamari, pomegranate juice, garlic, ginger, and a good pinch of chili flakes. Pour the sauce over the chicken and toss to coat. Bake for 25-30 minutes, until the chicken is cooked through and the sauce is bubbling.
    5. Turn the oven to broil and broil 3-5 minutes, until the chicken caramelizes on top. WATCH CLOSELY, the broiler works fast. Serve the chicken, broccoli, and sauce over bowls of rice topped with green onions and pomegranate, if desired.

Instant Pot

  • 1. Arrange the chicken and broccoli inside the instant pot bowl.
    2. In a bowl, whisk together the honey, ketchup, tamari, pomegranate juice, garlic, ginger, and a good pinch of chili flakes. Pour the sauce over the chicken and toss to coat. Seal the lid and cook on high pressure for 8-10 minutes.
    3. Once done cooking, release the steam. Serve the chicken, broccoli, and sauce over bowls of rice topped with green onions and pomegranate, if desired.

    Made this recipe and while it was simple to follow, the sauce was runny and did not adhere to the chicken well. If we were to broil it to the thickness we thought, it definitely would have been overcooked. Additionally, it could use a little more heat — too sweet 🙂

  2. I noticed that the liquid was very watery at the end of cooking. I added conrnstarch to the hot liquid and then mixed it all back together before broiling. Presto!! Much better and very delicious.

    My daughter and I just made this and we’d make a few tweaks next time around: less honey (1/3 c), more soy sauce and add the broccoli half way thru the baking time for a crisper veg. Top with green onions and toasted sesame seeds.

    I followed the instapot recipe, the broccoli came out like mush. I wish I steamed them separately and added to chicken after it was done cooking. Otherwise good flavor.

    Yummmm!!! The flavors in this were awesome. Nice strong Ginger. My sauce did thin out with the chicken juices as it cooked, which was fine. I did not need to broil it as the broccoli was crispy and browned from the hot oven. I used half of the honey and then substituted the rest with brown sugar just to save on my expensive honey. Overall, I’ll definitely make this again but perhaps with slightly less honey and brown sugar in general as it is plenty sweet.

  7. I have made your chicken, soy garlic and broccoli recipe. Sorry I don’t remember the exact name. The sauce is really good. I have been looking for a good homemade Asian sauce. I’m not a big fan of broiled broccoli, so I cooked that separate. I’ve also made extra sauce, separate and put it in a container for later in the refrigerator. I have also found that if you make the sauce ahead and put it in the refrigerator, the flavors meld together and it’s even more delicious. I am plant-based and my family isn’t so I cook up everything separately and then everyone has the opportunity to take as much rice, as much vegetables, as much chicken and sauce, as they like in the proportions they like it. The only drawback to this dish is if you use fresh ginger it takes a while to peel and cut it up or grate it up. I think I’ll get faster at peeling ginger. Other than that it’s pretty yummy.

    1. Hi Terry! I noticed your comment about the ginger, and wanted to let you know that peeling is optional. The skin is very thin and unnoticeable, so I just leave it on; it’s edible. I also use a microplane to grate it instead of chopping, since cutting ginger with a knife is time-consuming. You could also use one of the small sides of a box grater.

    Yum! The flavors of this dish were great. Very easy and took less than 10 minutes to throw together. I agree with the others that the sauce was on the more watery side, however the flavors were delicious and that did not take away from the dish. My family enjoyed it as well. I will be making again!

  10. Try mixing in 1-2 tablespoons of cornstarch or tapioca starch to the sauce mixture before mixing sauce with chicken and broccoli. As it cooks, the sauce should thicken up by the end of cooking. Saves you a step or two and from having to wash another pot to thicken up the sauce with cornstarch slurry.

    Sorry, but we did not like this. Experienced home cook and I had high hopes, but it just wasn’t good. The broccoli released so much water that the sauce needed time to thicken. The sauce couldn’t get sticky and thicken up without waaaaay overcooking the chicken and broccoli. Won’t make this one again.

    1. We had the same issue and I knew it would happen. I ended up removing all the sauce and adding cornstarch to a pan to thicken it up and it was delicious.

  12. I made the sheet pan version, followed the directions, including broiling, but unable to replicate the shiny, sticky sauce? The scallions and pomegranate added a nice touch. Any ideas?
