It doesn’t look like it, but when you read this recipe, to me, it screams retro. Retro, like a recipe your grandma would have made way back in the day. This is totally something my Nonnie would have made on repeat. 

It’s EASY, which we of course love. My Nonnie was a real pro at creating delicious dinners that took very little effort on her part. She knew her time was better spent shopping with me! 

Her secret was using ingredients that did double the work. She would incorporate a lot of store-bought seasoning packets and sauces to add flavor. She’d also take shortcuts whenever she could. But regardless, her dinners were always delicious, and I know she’d fully approve of this recipe.

So what is the “retro” secret ingredient here? A little bit of ketchup. It gives this sticky sauce added body, flavor, and sweetness.

I know it’s not a new concept by any means, but I don’t often use ketchup for cooking. I usually reserve it for dipping my french fries. But I’m now sold on using ketchup in sauces. Sounds odd, but wow, it’s so delicious.

The details

This recipe is so simple and straightforward. Grab some broccoli and chicken, I love to use a mix of chicken breasts and thighs. My family prefers chicken breasts, but I think thighs always add flavor. They give just the right amount of fat to keep chicken from drying out. I find a mix is always nice! 

Arrange the chicken and broccoli inside a baking dish. I use a smaller sheet pan with sides. Ideally, you want to use something a little smaller than a 9×13 inch baker. This will allow the sauce to better thicken around the chicken. A sheet pan with sides is perfect!

Now the sauce. Mix equal amounts of honey, ketchup, and tamari (or soy sauce) together. Then add tart pomegranate juice, garlic, ginger, and chili flakes. Mix and pour the sauce over the chicken. 

Bake until the sauce thickens slightly around the pieces of chicken and broccoli.

At the end of cooking, I like to switch the oven to the broil setting and get the chicken caramelized on top. Just watch closely, the broiler can really work FAST. 

I was shocked at how well the timing of everything ended up working out. Nothing fancy here, just simple cooking, but very delicious.

Serve the sauce, chicken, and broccoli over steamed rice with plenty of green onions, and if you’re into it, pomegranates too. I love using them because they add color and juiciness.

  • 1. Preheat the oven to 450° F. Rub a baking sheet with oil.
    2. Arrange the chicken and broccoli in the prepared baking dish.
    3. In a bowl, whisk together the honey, ketchup, tamari, pomegranate juice, garlic, ginger, and a good pinch of chili flakes. Pour the sauce over the chicken and toss to coat. Bake for 25-30 minutes, until the chicken is cooked through and the sauce is bubbling.
    5. Turn the oven to broil and broil 3-5 minutes, until the chicken caramelizes on top. WATCH CLOSELY, the broiler works fast. Serve the chicken, broccoli, and sauce over bowls of rice topped with green onions and pomegranate, if desired.

Instant Pot

  • 1. Arrange the chicken and broccoli inside the instant pot bowl.
    2. In a bowl, whisk together the honey, ketchup, tamari, pomegranate juice, garlic, ginger, and a good pinch of chili flakes. Pour the sauce over the chicken and toss to coat. Seal the lid and cook on high pressure for 8-10 minutes.
    3. Once done cooking, release the steam. Serve the chicken, broccoli, and sauce over bowls of rice topped with green onions and pomegranate, if desired.

    I use HBH recipes on most given nights for dinner, but this one I should have read the reviews on first… runny watery sauce that didn’t thicken and chicken that dried out, which I should’ve realized at such a high temp for nearly 30 minutes. Really disappointed in this one and would not revisit

    I thought this was amazing! Super easy, used a giant baking pan with rims and worked great. I loved the crunchy broccoli and the chicken with the sauce over rice. I didn’t end up broiling it at the end because I baked it for 30 min and it looked done. I might try baking it 25 min and then broil just to see if it turns out different at all The house still smells yummy from cooking it 🙂 I’ll definitely be making this again!

  4. There are numerous recipes of yours that I enjoy, unfortunately this is not one of them. As others have stated the sauce does not thicken when baking and the broccoli is sitting in broth. I reserved some of the sauce for serving so I added to this the thin broth created on the baking sheet. To this I added cornstarch, mixed well and returned it to the baking sheet. I then broiled everything as you suggested and was able to salvage the meal. Flavors are good but overall I was disappointed. I do appreciate your recipes that work!

      I was drawn to this recipe because I had all of the ingredients on hand(and I love HBH recipes). After reading the reviews, I changed the cooking methods completely as well as cutting the ketchup in half. Lightly steamed the broccoli separately, sauted the chicken bites in avocado oil stove top, whisked together the sauce in a bowl, then added everything except the rice in with the cooked chicken. I used a microwave in a bag coconut lime basmati rice (Costco). Delicious and so simple. The sauce did thicken for me and the whole thing took 30 minutes start to finish. Next time I will add water chestnuts.

    Honestly cannot believe this recipe called for equal parts Ketchup. Really permeated through the dish and overpowered the other ingredients. So many other simple pantry ingredients to use that wouldn’t ruin the dish.

  6. This was ok, General Tso’s is still best IMO. 2″ cubes are very large, assumed a typo. For this and some of your other sheet pan recipes, I’ve used two small pans. Cooking veggies next to raw chicken is not appealing, and I can better control how much time I cook the veggie (very quick vs. raw chicken). I also didn’t like the idea of the broccoli soaking in sauce the entire time. Using oiled pans seemed to defeat the purpose of easy clean-up of baking vs. stir-frying, but I initially obeyed. The broccoli was quickly charred on the bottom due using oil vs. parchment. I switched to parchment like General Tso recipe, only to find this was a mistake at the end when broiling the pan of chicken! Word to the wise who make both recipes. Another suggestion is to advise on substituting powder vs. fresh ginger. I used a rounded 1/4 tsp, but it wasn’t enough. A “good pinch” of chili flakes could be converted into a measure as well, for fussy readers like me. Haha

    Like many others mentioned, the flavors were good, but the sauce was the opposite of sticky–it was very watery. Next time, I’m thinking I’ll try roasting the broccoli on its own and doing the chicken and sauce on the stovetop to have a bit more control. It negates the idea of a sheet pan recipe, but hopefully it’ll turn out with a better consistency for the sauce.

    The instant pot method ruined the broccoli and the sauce released so much moisture it turned into a soup. Half-baked is right.

    The flavors were excellent, BUT, despite following the recipe to the letter,the chicken released so much juice that the sauce never turned “sticky“. Even with broiling. It essentially came out as more of a soup.

  10. This looks amazing but when I made it it fell flat. My sauce was watery and flavorless. The broccoli was soggy. How did you get your sauce so thick??

  11. I often love and appreciate your recipes but this one needs a rewrite. I read all the negative comments about the problem with the sauce and considered that it could have been user error, but sadly, it’s recipe error. Please edit directions to add corn starch at some point to fix the need for extra steps to salvage the recipe. I had to remove all the non-sauce items from the pan, make a cornstarch slurry and broil the sauce again then mix all the parts together again. It negates the utility of a sheet pan meal! Thank you

    I’ve made this twice now as described and have not had the runny sauce issues others have had.
    I cook the chicken and broccoli on a stainless steel baking sheet and it turns out perfect every time.
