It doesn’t look like it, but when you read this recipe, to me, it screams retro. Retro, like a recipe your grandma would have made way back in the day. This is totally something my Nonnie would have made on repeat. 

It’s EASY, which we of course love. My Nonnie was a real pro at creating delicious dinners that took very little effort on her part. She knew her time was better spent shopping with me! 

Her secret was using ingredients that did double the work. She would incorporate a lot of store-bought seasoning packets and sauces to add flavor. She’d also take shortcuts whenever she could. But regardless, her dinners were always delicious, and I know she’d fully approve of this recipe.

So what is the “retro” secret ingredient here? A little bit of ketchup. It gives this sticky sauce added body, flavor, and sweetness.

I know it’s not a new concept by any means, but I don’t often use ketchup for cooking. I usually reserve it for dipping my french fries. But I’m now sold on using ketchup in sauces. Sounds odd, but wow, it’s so delicious.

The details

This recipe is so simple and straightforward. Grab some broccoli and chicken, I love to use a mix of chicken breasts and thighs. My family prefers chicken breasts, but I think thighs always add flavor. They give just the right amount of fat to keep chicken from drying out. I find a mix is always nice! 

Arrange the chicken and broccoli inside a baking dish. I use a smaller sheet pan with sides. Ideally, you want to use something a little smaller than a 9×13 inch baker. This will allow the sauce to better thicken around the chicken. A sheet pan with sides is perfect!

Now the sauce. Mix equal amounts of honey, ketchup, and tamari (or soy sauce) together. Then add tart pomegranate juice, garlic, ginger, and chili flakes. Mix and pour the sauce over the chicken. 

Bake until the sauce thickens slightly around the pieces of chicken and broccoli.

At the end of cooking, I like to switch the oven to the broil setting and get the chicken caramelized on top. Just watch closely, the broiler can really work FAST. 

I was shocked at how well the timing of everything ended up working out. Nothing fancy here, just simple cooking, but very delicious.

Serve the sauce, chicken, and broccoli over steamed rice with plenty of green onions, and if you’re into it, pomegranates too. I love using them because they add color and juiciness.

  • 1. Preheat the oven to 450° F. Rub a baking sheet with oil.
    2. Arrange the chicken and broccoli in the prepared baking dish.
    3. In a bowl, whisk together the honey, ketchup, tamari, pomegranate juice, garlic, ginger, and a good pinch of chili flakes. Pour the sauce over the chicken and toss to coat. Bake for 25-30 minutes, until the chicken is cooked through and the sauce is bubbling.
    5. Turn the oven to broil and broil 3-5 minutes, until the chicken caramelizes on top. WATCH CLOSELY, the broiler works fast. Serve the chicken, broccoli, and sauce over bowls of rice topped with green onions and pomegranate, if desired.

Instant Pot

  • 1. Arrange the chicken and broccoli inside the instant pot bowl.
    2. In a bowl, whisk together the honey, ketchup, tamari, pomegranate juice, garlic, ginger, and a good pinch of chili flakes. Pour the sauce over the chicken and toss to coat. Seal the lid and cook on high pressure for 8-10 minutes.
    3. Once done cooking, release the steam. Serve the chicken, broccoli, and sauce over bowls of rice topped with green onions and pomegranate, if desired.

    The flavor of the sauce is delicious but like the other reviews, my sauce never thickened and seemed to have more liquid after cooking than when it went into oven. I did broil it and wanted to leave it under the broiler longer but was worried it would burn. I loved the sauce flavor but was looking forward to it being sticky. Any suggestions on how to get it stickier would be greatly appreciated.

    I read the reviews and added a Tablespoon of corn starch to the sauce, and put the chicken in a smaller dish than the sheet pan so the chicken could cook in the sauce. It was not runny at all. I added a bell pepper with the chicken, and steamed the broccoli separate. I mixed in the broccoli after I pulled it out of the oven. Served over rice I thought it was delicious and would definitely make it again!

    The flavor was delicious! I just can’t figure out what I do wrong. Every recipe that says to cut the chicken breast into cubes, comes out very dry! What could I be doing wrong? They were not too small, if anything they were a bit larger than yours. Yours look so moist!

    Having cooked recipes of yours for years, this recipe is a miss. Sauce comes out as a watery consistency and didn’t thicken in the oven. Flavor was also overpowered by ketchupy flavor.

    Was so excited but it was just water, not sauce. Scooped the water out and put it in a saucepan with 1tbsp cornstarch and it turned it into a sauce.
    Do you use recipe testers? I think that would help avoid all these comments.

    Sorry to add to the comments, but we found the sauce to be super sweet and very watery like a few others said.

      1. This was a flop, which is rare from HBH. Like everyone else, sauce never thickened. Even broiled for 12 min. Ended up transferring liquid which was around 1.5 cups to bowl with 1 T of cornstarch, whisked and finished on stovetop. Was ok, 5/10.
