This simple Sheet Pan Sticky Ginger Soy Chicken and Broccoli is about to become your new go-to meal. Easy homemade, extra saucy chicken, tossed in a gingery, sweet, spicy, and extra sticky honey soy sauce. Serve with steamed rice and broccoli – cooked right alongside the chicken – for the easiest sheet pan dinner. A delicious, fun, take-out style dinner made at home – and much healthier too – that’s great any night of the week!

It doesn’t look like it, but when you read this recipe, to me, it screams retro. Retro, like a recipe your grandma would have made way back in the day. This is totally something my Nonnie would have made on repeat.
It’s EASY, which we of course love. My Nonnie was a real pro at creating delicious dinners that took very little effort on her part. She knew her time was better spent shopping with me!
Her secret was using ingredients that did double the work. She would incorporate a lot of store-bought seasoning packets and sauces to add flavor. She’d also take shortcuts whenever she could. But regardless, her dinners were always delicious, and I know she’d fully approve of this recipe.

So what is the “retro” secret ingredient here? A little bit of ketchup. It gives this sticky sauce added body, flavor, and sweetness.
I know it’s not a new concept by any means, but I don’t often use ketchup for cooking. I usually reserve it for dipping my french fries. But I’m now sold on using ketchup in sauces. Sounds odd, but wow, it’s so delicious.

This recipe is so simple and straightforward. Grab some broccoli and chicken, I love to use a mix of chicken breasts and thighs. My family prefers chicken breasts, but I think thighs always add flavor. They give just the right amount of fat to keep chicken from drying out. I find a mix is always nice!
Arrange the chicken and broccoli inside a baking dish. I use a smaller sheet pan with sides. Ideally, you want to use something a little smaller than a 9×13 inch baker. This will allow the sauce to better thicken around the chicken. A sheet pan with sides is perfect!

Now the sauce. Mix equal amounts of honey, ketchup, and tamari (or soy sauce) together. Then add tart pomegranate juice, garlic, ginger, and chili flakes. Mix and pour the sauce over the chicken.
Bake until the sauce thickens slightly around the pieces of chicken and broccoli.

At the end of cooking, I like to switch the oven to the broil setting and get the chicken caramelized on top. Just watch closely, the broiler can really work FAST.
I was shocked at how well the timing of everything ended up working out. Nothing fancy here, just simple cooking, but very delicious.

Serve the sauce, chicken, and broccoli over steamed rice with plenty of green onions, and if you’re into it, pomegranates too. I love using them because they add color and juiciness.

I loved the idea of this recipe! We’re big fans of pomegranate and I was so excited to incorporate it into a dish. Unfortunately, like other comments, the entire thing turned to mush. I followed the Instant Pot directions and erred on the lower cook time – but it still turned out poorly. Such a bummer because the sauce on its own before cooking was delicious! I may try again in the oven and reserve half of the sauce for the last few minutes under the broiler. Would love updated directions for this!

Tried the instant pot method on this… delicious flavor but the broccoli turned to mush and the sauce was not thick or sticky – very soupy. Did 19 minutes high pressure… not sure what I coulda done different but we thought it was delicious regardless and the rice helped with the liquid. Def recommend the pomegranate seeds – yum!

I followed this recipe exactly and what came out of the oven was like a nasty brown soup. It was watery and soggy, not at all caramelized or sticky. I have no idea why. 0/10 on this one, sorry!

I thought this was really good! I get what people are saying about the sauce not thickening, but I thought it was still fine over rice. I am always skeptical of sheet pan chicken meals, especially when the chicken is cut into small pieces because I find that it is very easy to dry out. I never make meals like this with chicken breast, only thighs since they don’t dry out as easily.

I did the instant pot version. It was very flavorless and didn’t smell great. Maybe the oven version would yield better results

Delicious flavors. Just removed the chicken/broccoli once thermometer reached temp.
Returned sauce to oven to broil to thicken sauce.

After reading other reviews, I reduced the cooking time, but the chicken was still overcooked. As others have noted, the sauce doesn’t thicken and is not very flavorful (once served, adding siracha sauce and soy sauce made it passable).

Seriously horrible.
Huge miss on this one. Feels like instructions were missing or wrong. Chicken was WAY over done and lacked flavor. All I could taste in the sauce was the ketchup and I used less than was called for b/c it was all I had. The sauce did thicken up but at the expense of the chicken drying out. It’s too bad, I was really excited about this recipe.

I have made this many times and we love it ! After reading all comments, I have some suggestions. I use 3 good sized broccoli crowns and find chicken thighs work better than chicken breasts. I realized I don’t need parchment paper as it just got soggy. If the sauce doesn’t thicken as much as I like, I put it in small pot on the stove with 1tbsp cornstarch.

This was delicious and very quick and easy. I read the comments about the sauce not thickening so I put it on a large sheet pan, cooked it for 20 minutes and then broiled it longer….the sauce thickened and it was perfect.

I made this for dinner, and while the flavors were delicious, the sauce never thickened. I followed the recipe explicitly. I did notice though that in the longer explanation it says “equal parts honey, ketchup, and tamari (soy sauce)”, but the ingredient list says 1/2 cup honey, 1/2 cup ketchup, 1/3 cup soy sauce…could this be the issue? I make HBH recipes 3+ times a week, and this was my first disappointment. Open to trying it again if I can figure out the issue! LOVE a one pan meal.
I’ve tried this twice now and each time the sauce never gets sticky or caramelized on the chicken. The chicken is dry and the broccoli is soggy because the sauce is like soup. I wanted to love this recipe so maybe I’m doing something wrong?!

Terrible. I’ve tried lots of recipes from HBH that have been great. This recipe is a big miss though. Sauce wasn’t sticky and the Chicken pieces were dry. Lacked flavour.

I love the flavor profile of this dish but the chicken, although I cut even pieces, got dried out I the oven. There has got to be another way or lower temp to make this dish happen
