15 Minute Soy Sauce Butter Fried Rice, the crazy easy dish that’s one of our favorite easy dinners. Stir fried rice in the simplest mix of soy sauce, chili flakes, and butter (the real secret). Mix in bright green broccoli and green onions for color. This fast and easy fried rice can be made and ready in less than 15 minutes making it perfect for busy days.

Look, I know this recipe might look and sound pretty basic, but please don’t knock it till you try it. It’s one of our current favorites. And let me just say that for Asher and my mom, this is an every few days kind of recipe. It’s very much their kind of meal.
Here’s the story…everyone from Creighton on down (yes all of my brothers), Asher, and my mom adore fried rice. It’s a dinner they’ll enjoy multiple times a week. When the boys are here, I have to go heavy on the chicken, but either way, everyone loves it.
They all felt it was odd that I didn’t have a recipe for basic fried rice on the site for you guys. But I didn’t just want to share a recipe you could easily find elsewhere.
Their response was, but yours is so good, people would really enjoy it…isn’t that the idea? The funny thing is that it’s the most basic, simple, straightforward fried rice. Literally nothing to it, but the outcome is pure comfort food and totally delicious.
It’s all about how and what you fry the rice in. I use a mix of tamari (you can obviously use soy sauce, but I prefer tamari), honey, and butter.
But the butter is the real secret.

I mix a little tamari, with a tiny amount of honey, and a good pinch of chili flakes. You can use the chili flakes to taste.
Then, cook the eggs until they are just set. You don’t want them to be fully cooked. Underdone and still wet is the key. Then add in the rice and plenty of broccoli. I often mix up the vegetables using peppers, carrots, cabbage – really whatever I have on hand, but broccoli is the family favorite.
Then stir in plenty of butter. You want to cook the rice in the butter until the rice is fully coated. You’re basically frying the rice in butter.
Add the tamari mix and green onions, then finish cooking. You want the sauce to stick to the rice and help the rice get crisp.
Serve it while it’s steaming hot with green onions and chili flakes on top.
Keep it simple, that’s the beauty of this recipe. Let the flavors of the butter, sauce, and chili flakes really come through.

Of course, if you want to make this a little heartier, you can add cooked chicken or shrimp. This rice would be delicious with either one…or do both!
My favorite way to serve this fried rice is with my cheese Rangoons. Together they make the perfect dinner!

This should be COLD steamed rice? You don’t indicate hot or cold…in my experience it will turn into mush and not crisp the rice if the rice is not cold – and cooled in the fridge, of course, not on the counter. Please, fellow rice lover, remind people why we are not eating left-over rice, or rice cooled at room temp ;(

I really appreciated the flavor that the butter brought without the greasiness that oil usually brings to fried rice. I am also a new fan of Tamari! It really is much more layered flavor than soy sauce.

Most fried rice recipes call for day-old steamed rice. Would it make a difference using day-old vs same-day rice?

Instead of butter I use Sesame oil. Great flavor. Been making this dish for 30 yrs!!!

Yes, I’m making this tonight too. There’s a block of tofu in the fridge that has to be used.
I’ll oven fry that until brown and crisp, add it to the fried rice. Complete protein meal…done!

Just made our family’s version of fried rice and will try your version soon. I’ve never put butter in it and I’m intrigued. I always cook extra rice for this on purpose and even if we don’t have a lot of fresh vegetables on hand I throw in whatever frozen ones I have.

Is the broccoli cooked or steamed before hand. Seems like it would be very raw this way.
If the broccoli is chopped small enough it will cook very quickly.
