Sheet Pan Steak Gyros: Street food inspired oven-roasted steak, seasoned, shredded, and stuffed inside fresh pitas with all the extras. Add delicious creamy feta swirled tzatziki sauce, garlic tahini sauce, and all of the desired toppings you love. This Greek-inspired steak gyro is SO GOOD. It makes for a quick, fun, delicious, and different weeknight meal. Serve each gyro with homemade fries (we love sweet potato) for a meal that everyone will truly love.

One of our newer favorite foods over the past few years has been a gyro. They’re delicious, of course, but they’re also fun. I pile ours with all our favorite toppings plus homemade tzatziki sauce, and sometimes I’ll do a garlic tahini sauce, too. It’s delish!

Gyros are great to make on busy nights, either in the crockpot or with this quick 30-minute recipe. Someday…I’ll make lamb gyros, which are traditional, and would make my oldest brother, Creighton, so excited! He’s always asking me to make lamb gyros. He says they are his favorite.

Maybe my next cookbook! A lamb gyro! That would be fun! I have a recipe on the site, but it’s from 10 years ago. It’s probably time for an update!

Anyway, I can’t remember the first time I made a gyro, but over the years I’ve slowly perfected my seasoning blend. Sometimes I’ll use chicken, but more often, flank steak roasted up quickly and easily on a sheet pan is my go-to!

I make my homemade naan, or pull some out of the freezer. Then I chop up a whole bunch of lettuce and herbs and add feta to my tzatziki sauce.

Dinner is ready pretty quickly, and it’s always so yummy!

Special Tools

Just a sheet pan! Simple and easy today!

Steps

Step 1: season + marinate the steak

Working on a sheet pan, rub the steak with garlic, paprika, cumin, dried oregano, chili powder, cayenne, lemon zest, and olive oil. Season the steak with salt and chili flakes.

If time allows, let the steak marinate for 20 to 30 minutes.

Step 2: cook the steak

When ready, roast the steak at 475°F for 10-12 minutes. Allow the steak to cook until it’s done to your liking. I found 12 minutes to be the perfect time.

Then broil for 2-5 minutes to give it a char.

Let the steak rest before you slice to lock in the juices and flavors.

Step 3: Tzatziki sauce

You can make homemade Tzatziki sauce or use store-bought. I always make my own and add crumbled feta cheese. It makes it even yummier. You can also add some heat by adding a jalapeño!

Step 4: assemble

Stuff the steak and lettuce into warm pitas/naan. Add the feta swirled Tzatziki sauce, pickled red onion slices, maybe some sun-dried tomatoes, pepperoncini, and lots of fresh herbs. I love dill and basil.

To finish, I always, always serve homemade French fries—the perfect dinner! We’ve been loving sweet potato fries! I roast them with olive oil, onion powder, garlic powder, smoked paprika, and sea salt! They are so yummy served in the gyro or alongside the gyro!

    1. Hi Madeleine,
You can add that in step 2 with the seasonings. Please let me know if you have any other questions!

I recently tried the Sheet Pan Steak Gyros with Feta Tzatziki Sauce recipe, and overall, it was a decent addition to my dinner rotation.

The concept of a sheet pan meal is always appealing for its simplicity and minimal cleanup, and this dish delivered on that front. The recipe came together fairly easily, with straightforward instructions that made it accessible even for a busy evening.

I followed my usual practice of marinating the steak overnight, as I do with most meats unless there’s an acidic component that might over-tenderize. This step added good flavor depth, and the steak came out tender and juicy. I stuck to the recipe’s ingredient list exactly, using the specified seasonings for the marinade and the components for the feta tzatziki sauce. The tzatziki was a highlight—creamy, tangy, and with a nice salty kick from the feta. It paired well with the warm pita and fresh veggies, making each bite refreshing and satisfying.

That said, the seasoning blend for the steak felt like it was missing something. The chili powder was prominent, but I couldn’t shake the feeling that the overall flavor profile needed a bit more complexity or balance.

Perhaps a touch more cumin for warmth or a pinch of smoked paprika for depth could elevate it—I’m still trying to pinpoint what would take it to the next level. The flavors weren’t bad by any means, just a little one-note compared to what I expected from a gyro-inspired dish.

All in all, this recipe is a solid 3.5 out of 5. It’s a great option for a quick, flavorful meal, especially if you love gyros and want something homemade. With a tweak or two to the seasoning, it could easily become a regular in my kitchen. I’d recommend it for anyone looking for an easy sheet pan dinner with bold Mediterranean vibes, but don’t be afraid to experiment with the spices to suit your taste!

    1. Hi Matt,
Thanks for trying this recipe and sharing all of your detailed notes! Glad to hear you would make it again! xx

  2. Has anyone done this recipe with chicken instead of steak? Would chicken be good using the same method ?

    1. Hey Kelly,
Sure, chicken would also be delicious! You will probably need to increase your cook time for the chicken. I hope you love this recipe! xx

  3. Yeah, it’s funny. I saw this recipe with tzatziki and feta assuming there was going to be an actual recipe for tzatziki instead of a link to Target to buy it.

  4. I noticed you cut your steak with the grain, is there a reason to do it that way or is it just your preference?

    1. Hi Susan,
I do slice against the grain. It helps to lock in the moisture! I would recommend slicing against the grain. Hope you love this recipe! Have a great week!

  5. Made this tonight with homemade pita and it was delicious! So much flavor in the meat! The pickled red onion idea added such a nice touch. Thanks!

    1. Hey Carly,
Amazing! I appreciate you giving this recipe a try, so glad it turned out nicely for you! Have the best weekend!🌸

This recipe needs a lot of work. Many ingredients left out of the steps and 475 is way too hot for parchment paper

  7. I think something is off with the recipe instructions – I can’t see where to put the onion powder, garlic or paprika

    1. Hi there,
So sorry, you can add those in step 2. Please let me know if you have any other questions, I hope you love this recipe! xx

    1. Hi there,
So sorry, you are going to add those in step 2. I hope you love this recipe, please let me know if you give it a try! xx

    1. Hi Nina,
So sorry about that! We are working to get this fixed ASAP! Basically, when you press the print button, the serving size goes down to 2, if you adjust that, the ingredients will fix for you! Again, so sorry! xx

Made this last night and we enjoyed it. Spices brought the meat alive, though my grocery has limited cuts of meat. Next time I will plan ahead. Didn’t make the French fries and used store bought Tatziki sauce. Will make again.
