Sesame Gouda Khachapuri. Khachapuri (Georgian Cheese Bread) is a traditional Georgian dish very similar to pizza. This Khachapuri uses fresh pizza dough with a sesame crust, three cheeses, herbs, garlic, and honey. The dough is in the shape of an oval and baked in the oven until the cheese is melted. Each Khachapuri has an egg on top that’s stirred into the cheese. It’s delicious!

A few weeks back, I got into the kitchen and just decided I was making this. I had no plans to make pizza or cheesy bread. The day just told me to make this; it sounded exciting.

I’ve made Khachapuri before. It’s essentially cheesy bread made with eggs so that the cheese is more like a sauce. It’s very similar to pizza, just cheesier – and better!

I wanted to use up all the Gouda cheese I had in the fridge. So I decided a sesame Gouda cheesy bread was the recipe of the day.

I just started to create the recipe. Sometimes, when I have an idea for a dish that sounds fun and exciting, or is a nice change of pace, I get really excited about creating it! And this Sesame Gouda Khachapuri came out so good!

Don’t skip the chili honey butter either. It really makes the cheese bread extra delish!

Here are the details

Ingredients

  • feta cheese
  • gouda cheese
  • provolone or spicy cheddar cheese
  • eggs – 2 whole eggs, 2 egg yolks
  • fresh pizza dough – make your own or grab some from the store
  • meyer lemon – optional
  • fresh cilantro, parsley, and dill
  • garlic
  • lots of sesame seeds

Honey Butter Ingredients

  • salted butter
  • honey
  • smoked paprika
  • Harissa sauce – to make it spicy, this is optional
  • chili flakes
  • flaked sea salt

Special Tools

To make this cheesy bread, you’ll need two baking sheets and a couple of mixing bowls. Plus the oven, of course!

Steps

Step 1: mix the cheese

Mix all 3 cheeses -the feta, gouda, and provolone- with 1 egg. The egg makes the cheese somewhat custardy.

I know this is different, but give it a try! It’s a great source of protein too.

Step 2: roll the dough

Working with flour and room temperature pizza dough, divide the dough in half. Push or roll the dough into rounds/ovals. Place each round on a baking sheet, then add the cheese to the centers.

Now fold the edges of the dough up and over some of the cheese to create “boats”. No need to stress about making them perfect ovals! Any shape they end up being will be great.

Step 3: add the sesame seeds

Brush a beaten egg around the edges of the dough and sprinkle with sesame seeds. I recommend using raw sesame seeds.

Step 4: the herbs

Mix the herbs in a bowl with the garlic, then sprinkle the herbs over the cheese.

Bake each cheese bread until the cheese is very melted. Add an egg yolk during the last 2-3 minutes of cooking.

Step 5: the honey butter

I made mine spicy with chili flakes and harissa. Simply mix everything up in a bowl with some smoked paprika and sea salt.

Step 6: serve

Serve the cheese bread warm with honey butter.

The idea is to stir the egg yolk and butter into the melty cheese, creating an even saucier cheesy center.

The bread is soft, the center is cheesy, and the sesame crust makes this cheesy bread even tastier!

Instructions

  • 1. Preheat the oven to 450° F. Line 2 baking sheets with parchment paper. 
    2. In a bowl, combine the feta, gouda/spicy cheddar, and provolone. Mix in 1 beaten egg and season with salt and pepper.
    3. Divide the pizza dough in half. On a lightly floured surface, push/roll each dough out into a rough oval shape (about 10 inches long). Transfer each dough to the prepared baking sheets. Spoon the cheese mixture evenly into the center of each dough round, leaving a 1-inch border. Arrange a few lemon slices of over the cheese, if desired. Fold the edges over the cheese to enclose the cheese and form a "boat".
    4. Brush the edges of each boat with the remaining beaten egg and sprinkle with sesame seeds.
    5. In a bowl, mix the cilantro, parsley, dill, and garlic. Sprinkle the herbs over each bread boat.
    6. Bake for 20 minutes or until the crust is golden and the cheese is melting. Remove from the oven and crack an egg yolk into the center of each boat. Return to the oven and bake another 3-5 minutes until just barely set. 
    7. Meanwhile, make the honey butter sauce by mixing all the ingredients.
    8. Remove the Khachapuri from the oven. Top with the honey butter. Stir the butter and egg yolk into the cheese; this will finish cooking the egg. Serve immediately and enjoy!

    Made this today for a family birthday celebration dinner for four of us. I only made a half batch, since it was an appetizer. I WISH I had taken a photo, because it was gorgeous heading to the table! And it was a huge hit—- we ate every morsel and still had room for the dinner!!! This recipe is a KEEPER!!
