Quick Saucy Coconut Curry Chicken – the perfect bowl of feel-good comfort food. A simple curry that’s quick and so delicious! This Indian-inspired coconut curry is made with chicken, spices, sweet potatoes, canned tomatoes, and coconut milk. Everything is quickly simmered on the stove and then served over bowls of rice with lemony cilantro and peanuts. Warm naan on the side for dipping makes this dish especially yummy!

When I first began to cook for my family, everyone said they didn’t like curry. At the time, I had a house full of somewhat plain eaters. But that couldn’t be more different now!

Almost everyone in our family has really come around. They now eat pretty much anything. Usually, the spicer and saucier the dish is, the better! My brothers are all very fond of curry. Even my dad, who originally said he really didn’t like curry, has been loving the curry recipes I’ve shared!

And this saucy coconut curry has been one of everyone’s favorite dishes of the month!

It’s a bit of a unique curry, or at least for myself. The sauce is made with spices, coconut milk, and canned tomatoes. It’s loosely inspired by an African curry! It’s so yummy, and one of the simplest curry sauces to mix up!

These are the details

Ingredients

  • chicken breasts, thighs, or use a mix. I usually use a mix of similar size pieces
  • yellow onions
  • garlic
  • ground ginger
  • chili powder
  • chipotle chili powder
  • ground turmeric
  • cumin
  • canned crushed tomatoes
  • coconut milk
  • fresh cilantro
  • lemon or lime juice – I actually use both, but lemon is more traditional
  • roasted peanuts
  • rice – for serving!

Special Tools

I use a cast iron skillet and a wooden spoon to make this curry. Very simple!

Steps

Step 1: start the chicken

In a skillet, add the butter, chicken, and yellow onion. Set the skillet over medium-high heat and start cooking. Next, add the garlic and all the spices: ginger, chili powder, chipotle chili powder, turmeric, and cumin. Then, season the chicken with salt and pepper.

Cook everything until some of the chicken pieces are seared and the spices are very fragrant.

Step 2: Add the sweet potatoes and coconut milk

Toss in the sweet potatoes, add the can of tomatoes, and then the coconut milk. Simmer the sauce until the chicken is fully cooked and the sweet potatoes are fork-tender.

Step 3: finish the sauce

Next, add a couple pats of butter to the sauce and a handful of cilantro too. Then, I like to transfer the dish to the oven to broil. This gets some of the chicken pieces crisped in the sauce.

This is optional, but I think it makes the quick-cooking sauce even yummier!

Step 4: serve

I love to serve the curry over bowls of rice. Then, I top it with fresh cilantro, lemon, and peanuts.

And, of course, warm naan on the side is especially yummy for dipping into the spiced curry sauce. You’ll love it!

  • 1. Preheat the broiler to high.
    2. In a large oven safe skillet, add 2 tablespoons butter, the chicken and onions. Set the skillet over medium-high heat. Add the garlic, ginger, chili powder, chipotle chili powder, turmeric, cumin, and season with salt and pepper. Cook until the chicken is seared and the spices are fragrant, 5-8 minutes.
    3. Add 1 cup water, the sweet potatoes, tomatoes, and coconut milk. Stir to combine, bring the sauce to a simmer, and cook for 10-15 minutes until the sweet potato is soft and the sauce has thickened. Stir in 2 tablespoons of butter and half of the cilantro. If desired, broil for 3-5 minutes to crisp some of the chicken pieces.
    4. Mix the remaining cilantro with the peanuts and lemon/lime juices and season with salt. Serve the chicken and sauce over bowls of rice with fresh naan. Top with peanuts and cilantro. Enjoy!

    Delicious! Added chopped kale at the last few minutes of cook time, and used cashews instead of peanuts, as that’s what was in the pantry. SO good!! Will definitely make again and again.

  4. I thoroughly enjoyed this recipe. The flavours were wonderful. I did add some broccoli to it and I cut the chipotle chili powder to a half tsp. However, next time I will try 3/4 tsp. I will definitely make it again.

    This was extremely flavoursome. (Due to intolerances avoided the 3tsp of chilli & pepper) Added a whole Red pepper for sweetness. The addition of the lemon & limes at the end gave it a lovely tang. The dish had lots of flavours….. I Will definitely be cooking this again soon ! I used 8 Chicken thighs no skin no bones, but think I will add a bit more chicken next time. Had it with Basmatic rice …Yummy Yum Yum 😋
