If you’ve been here for a while, you might remember the 5-Ingredient Chocolate-Dipped Peanut Butter Cookies I shared years ago — all the way back in January 2018. That was the year we all went to South Korea… do you remember?

I made those cookies before we left, and they’re still one of my absolute favorites, especially for January. Even my family — who don’t exactly love dates — can’t get enough of them.

Back then, dates weren’t really a trending ingredient. Now they’re everywhere, and honestly, it’s one food trend I can fully get behind. I adore dates. They’re nature’s candy — chewy, sweet, and packed with nutrients. A date a day is what I say!

Today, I’m sharing the easiest dark chocolate date bark. It’s made with just five ingredients: dates, pretzels (optional if you prefer no crunch), peanut butter, and dark chocolate. Simple, satisfying, and perfect for an easy winter treat.

These are the details

Ingredients

  • Medjool dates – use these for the most plump, chewy date
  • salted mini pretzel twist – optional but we love the salty crunch 
  • creamy peanut butter – I love Whole Foods 365 unsweetened peanut butter
  • dark chocolate chips or chunks
  • flaky sea salt – always!

The Steps

Step 1: Split the dates

Split each date in half, remove the pit, and arrange the dates on a parchment-lined baking sheet. Press them into a rectangle, making sure each date is touching at least one other so they form a solid base.

Step 2: Add the pretzels and peanut butter

Scatter the pretzels evenly over the dates. Drizzle the peanut butter on top, then gently spread it into an even layer.

Transfer the pan to the freezer while you melt the chocolate.

Step 3: Add the chocolate

Melt the chocolate chips, then pour the melted chocolate over the peanut butter layer. Use a spoon to spread the chocolate evenly.

Sprinkle with flaky sea salt. I also love adding dried rose petals — they’re so pretty.

Step 4: Freeze and crack

Freeze until fully set, then crack or cut the bark into wedges. Enjoy!

I like to keep these stored in the freezer.

The final result? Chewy dates on the bottom, the creamiestං peanut butter center with just the right amount of salt, and a chocolate top that cracks with every bite.

Instructions

  • 1. Line a baking sheet with parchment paper. Split the dates open and arrange them into a rectangle on the sheet, slightly overlapping so they all touch.
    2. Arrange the pretzels evenly over the dates. Drizzle or spoon the peanut butter on top. Transfer to the freezer while you melt the chocolate.
    3. Melt the chocolate chips, then drizzle over the top. Use a spoon to spread the chocolate so everything is evenly coated. Sprinkle with flaky sea salt.
    4. Freeze for 20 minutes, or until set. Break into pieces and enjoy! Store in the freezer or refrigerator.

    These just don’t work. The bottom doesn’t fully set, so it is runny peanut butter on the bottom and then the chocolate layer is thick and hard so biting into a piece is difficult. I would definitely try using more pretzels to give it some structure and maybe mix some coconut oil in with the peanut butter so it hardens.

    Definitely use a thicker peanut butter and make the pretzel layer really cover the dates! We definitely found ourselves wanting more crunch! Delicious flavor combo!

    I really wanted these to work but they didn’t. I don’t think the base is firm enough and they didn’t fully set. They were pretty messy & didn’t turn out like a bar or bark to me.

    These did not turn out well for me at all. The dates themselves just split open and laid out don’t seem like a solid base and nothing ever fully set even with longer time in the freezer. They are very messy.
