This is my third year posting this round-up of all the best Mexican recipes (check out year one and two) and umm, let me just say I am pretty excited about all the recipes I am sharing today, choosing just a few was nearly impossible. The enchiladas with cheesy rice are calling my name. Iโm in Germany at the moment and have trouble getting my hands on some of these ingredients, so Iโve started making a list of all the recipes I want to make once I get home. Awesome post!
Wow so many good recipes. Itโs funny, my birthday is on Cinco de Mayo, and as a food blogger I didnโt even think to do a roundup for it. Did a Mothers Day brunch one instead. At least I feel good about putting my Mom (and others first). I admire that you have so many amazing recipes that you can do a roundup of your OWN recipes like this. Thatโs awesome and thanks for the list!

So many wonderful pictures to choose from.
I like corn so I would try those first.
