I canโ€™t help it though, coconut goes so awesomely with so many things, and I just love the flavor.

Plus, itโ€™s so tropical and fun, and you know I am especially into anything tropical and fun right now.

I know you may think that making coconut milk from scratch is hard, but itโ€™s really not too bad.

Once you get the hang of cracking the coconuts things move along pretty quickly, and unlike a lot of nut milks there is no need for overnight soaking with coconut milk.

All you do is drain the water from the coconuts. Crack em open and pick out the the meat.

Then everything gets added to a food processorย or blender with some water andโ€ฆ blend away.

Then squeeze out the milk.

And walaโ€ฆyouโ€™re done!

The most time-consuming part is probably cracking the coconuts, but like I said, once you get the hang of it, it is pretty easy.

FYI, after cracking like twenty coconuts in the matter of one week I totally have the technique down pat.

Yeah!

  1. I love coconut milk, but rarely find myself buying it from the store anymore. I usually make mine with dried coconut, but the quality is probably 10x better with fresh coconut! ๐Ÿ™‚

  2. This looks delicious! Nothing like fresh coconut, and this recipe looks so easy!

  3. Yeah, Iโ€™m obsessed with coconut too! Especially since my doctor said go dairy free. Iโ€™m shocked this is so easy!

  4. Iโ€™m first gen Indian, so cracking coconuts in the garage is a way of life. Even better than doing it yourself is when youโ€™re in India itself and you buy coconut water on the street- they hack open the coconut and stick a straw in it right there for you! So fun and delicious. Your pictures here are gorgeous! I love everything coconut as well ๐Ÿ™‚

  5. I grew up with real coconuts (in the Amazon jungle) and we would poke the three little holes with a nut piercer (the sharp tool that comes with a nutcracker). Iโ€™ll never forget the sweet, milky, room temperature coconut juice. But itโ€™s a bear to get out. Youโ€™re thirsty by the time you succeed.

  6. I saw this on Food52 a few days ago โ€“ it looks so good! I must get myself some coconuts so I can try it soon!
