Pull Apart Jalapeño Pepper Jack Cheeseburger Sliders – these are just so fun! Perfect for laid-back entertaining from summer through fall, especially over a long holiday weekend like Memorial Day. Think soft, buttery dinner rolls stuffed with melty pepper jack and cheddar, fresh and pickled jalapeños, and a creamy house-style special sauce. Each mini cheeseburger is topped with garlicky butter, baked until golden, and served warm and toasty. Trust me, you’ll make some mouths water with these sliders!

I was so excited to share these that I bumped two other recipes to bring you this one just in time for the weekend. Because really—who doesn’t love a good summer slider?

What I love most about this recipe is how crowd-friendly it is. These sliders are made for gatherings, big or small. And when I mentioned “jalapeño pepper jack cheeseburgers” to my mom and cousin Abby? Game over. They were instantly sold. Anything spicy, cheesy, and slider-style is a guaranteed win.

These are cslightly spicy, cheesy, and so satisfying. Best part? You can prep everything ahead and pop them in the oven just as your guests arrive. Simple, delicious, and sure to impress!

Here are the details

Ingredients – for the sliders

  • ground beef, chicken, or turkey – I usually use ground beef
  • jalapeños – of course!
  • worcestershire sauce
  • onion powder/garlic powder/smoked paprika
  • dinner rolls
  • cream cheese
  • pickled jalapeños
  • pepper jack cheese
  • spicy cheddar or cheddar
  • salted butter
  • garlic
  • cilantro or basil
  • green onions

Ingredients – for the house sauce

  • mayo
  • ketchup
  • garlic
  • pickled jalapeño juice/brine
  • worcestershire sauce

Special Tools

For these sliders, you’ll need a skillet, a mixing bowl, and a sheet pan. Nothing too crazy!

Steps

Step 1: Make the House Sauce

Most special sauces are a mix of mayo, hot sauce, and ma
ybe some pickle juice—pretty basic.

For my version, I  use mayo, ketchup, garlic, pickled jalapeño brine, and a good splash of Worcestershire sauce.

It’s creamy, tangy, and just spicy enough—absolutely delicious on any burger!

Step 2: Make the Burger Filling

This step is kind of like making a sloppy joe.

Brown your meat—I usually use beef, but ground chicken or turkey also work great. Cook it with a chopped jalapeño, onion powder, garlic powder, smoked paprika, and a few dashes of Worcestershire sauce. Season with salt and pepper to taste.

If you want to add a fresh element, stir in chopped cilantro or basil at the end.

The jalapeño really makes these sliders shine!

Step 3: Layer the Sliders

I use King’s Hawaiian Rolls for the buns—not always my first choice, but they’re easy to find and taste great. One day I’ll make a homemade version!

Slice the rolls in half horizontally (keep them connected) and gently pull the bottom rolls apart—this helps them separate more easily after baking.

Spread a layer of cream cheese over the bottom half, then add a few pickled jalapeños.

Spoon on the burger mixture, drizzle with house sauce, and top with slices of pepper jack and some shredded spicy cheddar.

Finish with the top half of the rolls.

Step 4: Add the Garlic Butter

Make a quick garlic butter by mixing softened butter with minced garlic, herbs, and green onions.

Spread this generously over the tops of the rolls. You can also melt the butter and garlic on the stove and brush it on after baking—both methods work!

Step 5: Bake

Bake the sliders uncovered at a low temperature. This melts the cheese perfectly and toasts the buns just enough.

When they come out, they’ll be golden, cheesy, and smell amazing!

Serve warm with extra house sauce (and maybe some ketchup, too). These are perfect for summer gatherings—so easy and always a hit.

Instructions

  • 1. To make the sauce: combine all ingredients in a bowl.
    2. Preheat the oven to 350°F.
    3. In a skillet set over medium heat, cook the meat, the jalapeño, Worcestershire sauce, onion powder, garlic powder, paprika, salt, and pepper, until browned all over, breaking up the meat as it cooks, about 10 minutes. Remove from the heat.
    4. Place the bottom half of the dinner rolls onto a baking sheet lined with parchment paper. Gently spread the bottom layer with cream cheese. Add the pickled jalapeños, then pile on the meat. Drizzle 1/4 cup special sauce over the meat. Add the pepper jack and shredded cheddar.
    5. In a bowl, mix together the butter, garlic, herbs, and green onions. Spread the mix over the tops of the rolls. Bake for 20-30 minutes, until the cheese has melted.
    6. Serve immediately with additional special sauce – of course!

    These were really mushy for me, the bread was soggy, the bottom buns just fell apart. Maybe if the buns were toasted first that could help?
