Happy Monday, everyone! I hope everyone had a wonderful Easter weekend—spent some time outside, caught up with family and friends, and enjoyed some seriously good food. I’m so excited to be back in the kitchen today, with plans to cook up lots of fresh spring dishes!

Lately, I’ve been all about spring recipes—anything bright and fresh, packed with vibrant greens and herbs. And salmon has been on repeat. This bowl was a big hit. It’s absolutely scrumptious and so easy to throw together!

The salmon roasts right on a sheet pan with the bacon—so it’s a mostly hands-off recipe too (win-win!).

And before I dive into the finer details, I’ve got to say—I’m having a major honey mustard moment this season. It’s become one of my favorite spring and summer dressings, which is kind of wild because it is not a dressing ever used to cook with. But here we are: honey mustard, salmon, and bacon. So good. So addictive!

These are the details

Ingredients

  • salmon – do your best to find wild-caught
  • onion powder, garlic powder, and chili powder
  • bacon – get a thick cut with no sugar added
  • salted butter
  • garlic
  • a jalapeño
  • fresh basil or parsley – we love both
  • Romaine lettuce – arugula would be just as good
  • cooked rice – I love jasmine made with bone broth
  • fresh dill

Ingredients – for the honey mustard

  • mayo
  • dijon mustard
  • honey
  • lemon juice
  • chipotle chili powder
  • cayenne pepper
  • salt

Special Tools: a sheet pan

Steps

Step 1: cook the salmon and the bacon

I start with the salmon. Instead of cooking on the stove, I prefer to roast the salmon cubes on a sheet pan. First, toss the salmon with onion powder, garlic powder, chili powder, and season with salt and pepper. Now, arrange the chopped bacon around the cubes of salmon.

As the bacon cooks, the fat will render, allowing the salmon to cook wonderfully alongside. After 10-15 minutes, the bacon should be crispy, and the salmon should be cooked with a nice crisp top. So delicious!

If you prefer to omit the bacon, that’s fine too! Use oil or butter to help the salmon cook nicely and prevent sticking.

Step 2: the honey mustard

While the salmon cooks, make the homemade honey mustard. You might not think it’s worth the effort, but it’s far superior to the store-bought. It’s very creamy and easy to make, just mayo, Dijon mustard, honey, chipotle chili powder, cayenne pepper, and salt.

Whisk everything until creamy – super easy. Plus, you control the ingredients, so there’s nothing funky in your dressing.

Step 3: toss the salmon with the honey mustard

When the salmon is done cooking, add a few spoonfuls of the honey mustard and toss it up.

Step 4: the garlic butter

A few tablespoons of butter, browned with garlic. Then add a jalapeño for spice and top with fresh herbs, I use basil and parsley.

Step 5: serve

Serve the chunks of crispy salmon and bacon over bowls of rice and fresh greens. I used romaine, but I’ve since been using arugula, and I think I love it even more!

Then add some of the brown butter and don’t forget extra honey mustard too! Plus dill, which I think is so nice with salmon, bacon, and honey mustard! YUM!

Totally delicious! This will be great for the warmer spring and summer days ahead.

Salmon was overcooked, also very greasy. The garlic butter added even more fat. There were too many competing flavors that just didn’t work.

This was so tasty! I followed the advice of one of the other commenters and put my bacon in for 10 min alone, then did another 13ish with the salmon. There was very little grease or fat on the cooking sheet when done. I didn’t think the flavors overpowered each other at all. The bacon was such a welcome addition to the salmon. I whipped up some Asian pickled cucumbers and shallots to go on the side and they helped cut some of the heavier flavors. Yum! Kid & husband approved.

Way too much fat, between salmon which is a fatty fish, the bacon and then the addition of garlic butter on top is way too much fat/grease. There is very little acid to cut through the fat and it is very unbalanced. I would suggest eliminating the garlic butter all together it seems like an afterthought of an addition. Cook the bacon separate or leave it out completely. Overall the flavors just didn’t compliment each other-bacon, salmon, dill, jalapeno, dill, basil, chili powder, garlic butter, honey mustard. It’s a lot and not in a good way.

This was ok, but next time I think I’ll make some adjustments. Cooking the salmon and bacon together, with mayo AND butter drizzled on top felt just a little too greasy/fatty for me.

This was really good, but cooking the bacon with the salmon was way too much grease on the pan at the end. Will cook separately next time.

Wow excellent flavor! Hubby loved it! Next time I will cook the bacon separately as the salmon was overcooked by the time the bacon was crispy. Otherwise it was perfect!!
