Think spicy ginger bubbles, juicy cherry, and a squeeze of citrus—all in one super refreshing sip. This is the easy, no-fuss cocktail I mix when I want something bright, fizzy, and a little bit celebratory.
You’ll muddle, pour, and top with ginger beer. That’s it. Keep it simple or dress it up with fresh cherries and a salty-sweet rim. Either way, it’s summer-in-a-glass.

Cherries: Fresh give the best color and aroma; thawed frozen work in a pinch (extra juicy). If they’re tart, plan to add a touch more sweetener.
Vodka: Clean, neutral flavor lets ginger + cherry shine. If subbing bourbon or tequila, expect a warmer, more pronounced finish.
Ginger beer vs. ginger ale: Ginger beer = spicier, less sweet, bigger kick. Ginger ale = milder and sweeter; reduce any added sweetener.
Citrus: Lime is zesty and sharp; lemon is softer and floral. Use what you have—taste and adjust.
Sweetener: Simple syrup, honey syrup, or cherry syrup—start with a small splash and build. Aim for balanced, not sticky.

How fun are these Ginger Beer Cherry Vodka Sodas? I am in LOVE. I first got into ginger beer around this time last year, but never really started using and experimenting with it until Christmas, when I made what seemed like dozens and dozens of Moscow Mules for my crazy family. Ever since then, I’ve kind of been hooked. I mean, ginger beer is where it’s at. Just sayin.
So when the thought of a ginger beer, vodka soda, flavored with fresh summer cherries popped into my head, I was pretty much SOLD within seconds. Sometimes my brain comes up with beautiful and delicious things, and for that, I am very, very thankful.

Alright, so here is how this goes.
…start out by making a quick, cherry simple syrup. I like to use honey to keep things on the healthier side, plus, I kind of just love the flavors of honey with cherries and ginger, so good! Then simply…
…add ice to a glass
…add your ginger beer
…your cherry simple syrup
…your vodka + lime juice
…give it a little mix
…pretty it up with a fresh cherry and thyme spring
…drink it all up!
Done and DONE.

Can I use ginger ale instead of ginger beer?
Yes—expect a sweeter, gentler drink. If using ginger ale, reduce any added sweetener and add extra lime for balance.
How do I keep the drink fizzy for guests?
Build the cherry/citrus base ahead, keep everything ice-cold, and top each glass with ginger beer right before serving to protect the bubbles.
What if I only have frozen cherries?
Let them thaw and drain off excess liquid so the cocktail doesn’t get watered down; they’ll still give great color and cherry flavor.
How can I make it less sweet?
Use a spicier, lower-sugar ginger beer, skip added syrup, and lean on extra citrus. A pinch of salt can also sharpen flavors without more sugar.
