Baked One Pan Garlic Butter Coconut Salmon – an almost effortless meal! Made with rich salted butter, garlic, spicy jalapeño, fresh ginger, and creamy coconut milk. Broil the salmon first to get it nice and crispy, then finish it up by baking it in the coconut milk until perfectly cooked. I love to serve this saucy salmon over bowls of rice and top it off with a fresh avocado salsa. Just mix, bake, and serve—easy peasy!

Effortless cooking is the goal—and I couldn’t agree more. Especially as we head into summer, simple and delicious is the way to go. This coconut milk salmon has fresh Thai-inspired flavors, a hint of spice, and a creamy avocado salsa on top. It’s bold, flavorful, and super easy to make!

You need an oven-safe baker or skillet, a salsa bowl, and then just the usuals!

Arrange a few tablespoons of butter in a baking dish or oven-safe skillet. Add the salmon. Drizzle the honey over the salmon. Season with salt and black pepper.
Place the salmon under the broiler and broil until the tops of the salmon are crisping up.

Pull the salmon out. Now add the garlic, shallots, and jalapeños. Sprinkle over some ginger.
Pour over the coconut milk. Add some tamari or use soy sauce or even fish sauce.
Add a few more tablespoons of butter to the salmon.
Bake the dish until the sauce is thickening and the salmon is cooked to your desired doneness. I usually bake for around 10 minutes.

Mix avocado chunks or slices with mango chunks, lime zest, and lime juice, plus fresh cilantro or basil. I like to add some sea salt too.
I like to serve the salmon and sauce over bowls of rice and with lots of sauce.
Then add the avocado salsa and top with fresh basil and cilantro…so good!

This was excellent – we all loved it! The mango/avocado salsa is a must. I did find that there was too much liquid in the sauce, and it didn’t thicken in the time that the salmon was done cooking. I’d probably use 1/2c-3/4c of coconut milk instead of 1.5 cups next time. It was so thin that it was hard to get all of the shallots and jalapenos. But overall excellent meal!

If I don’t have coconut milk could I use heavy cream? Or would it make the taste a lot different?

Oh my goodness. This is amazing! I could drink that sauce! I made it pretty much as written, but based off other comments, I left off the butter after adding all the other sauce ingredients. I didn’t make the salsa, but added roasted asparagus to our bowls with the rice, salmon and sauce. Thank you for this easy gem that I will be making on repeat! 💗

I made the original recipe that I had printed out, now I see several changes. I really wish recipes wouldn’t get changed after posting! The recipe I printed had cumin and paprika and also a higher bake temp. The cumin and paprika are now gone, which is probably a good thing because the cumin really didn’t ‘go’ with the other flavors. I used thicker cut salmon filets and they were pretty overcooked. I know some people like salmon on the drier side but I prefer it moist and flakey. The sauce was too oily with too much butter, it pooled on top of the sauce. Looks like the temp is now reduced and the recipe calls for 6oz thicker cut filets. Please please if a recipe isn’t done don’t post it and then edit it later once your followers test it out and find out what doesn’t work. This has now happened to me a few times with recipes from this site and it is very frustrating.

Made this as directed and would make again with a few modifications:
Double the sauce + spices (we like it saucy)
Add broccolini to get some veg in
Would cube salmon (we have a picky eater)
Serve over rice noodles

The recipe from IG post has 1 tsp paprika and 1 tsp cumin listed but the website does not. Please clarify. Does basil go in with the coconut milk and cilantro with the salsa?

You can keep the recipe as written on the website, unless you like extra seasoning like paprika and cumin you can totally add those! I add the cilantro with the salsa and then garnish each dish with the basil. I hope this helps! xT
This one was rough. I try to support HBH recipes, but this really was a poorly written recipe. No harm done outside of the wasted ingredients. We’ll try another that will hopefully be better.

I’m kicking myself that I didn’t print this recipe out a few days ago when I first saw it! I wanted to make it with all of the other spices etc. Any way you could include the original recipe somewhere, maybe as a note? Just wanted to make your original version, it sounded so yum.
