Guys, we have serious, serious things to chat about today.

Number one is obviously these carnitas. These extra special, super delicious slow roasted pork carnitas.

And two? Well two is about what’s been on my mind recently. Let’s start with two, and then we’ll move on to the carnitas. Promise, I will try not to write a novel…

So lately I’ve been I wanting to do more with the blog. I need a little more of a challenge, something new, something different, and I feel like the blog needs a little update. I’d like you to let me know what you’d like to see more of on HBH. Is it super easy recipes? More quick how-to videos? Longer videos… where I talk and talk and talk? Do you like hearing all about my life and what’s happening behind the scenes? Or would you prefer for me to simply stick to content? How about some lifestyle posts? Would you be into fashion inspired posts? If so, what areas? I really want to know what you’d love to see me share? I want to go there, to add something new and fun and fresh and different! So please… give me your thoughts, ideas, comments… I want to hear them all!

PS. the fashion thing?? Anyone? You know my whole life I thought I was going to work in the fashion industry, but then my move to LA happened and I kind of freaked, and then this blog happened. Now I only buy dishes and surfaces, and only wear Lululemon tights and sweatshirts smeared with chocolate all day long…I wouldn’t mind bringing a little fashion back into my world. Would you guys be into it? My favorite trends? My wish list? Maybe some go-to working girl outfits? Maybe only as a monthly thing, or maybe more? Thoughts?!?!

PSS. What about entertaining posts!?! I’m really into these. Like dinner parties, summer get-togethers, cocktails… Would you be interested in seeing more of these types of posts?

OKok, and now let’s chat carnitas!!!

The pork gets slow cooked for two to three hours and when it’s finished, it literally just falls apart. The shredded meat makes for the most epic round of tacos, complete with all the toppings. The meat just melts in your mouth and the flavor is insane.

Like nothing better.

Also, while this meat is great for tacos, it’s also great for burrito bowls, nachos, pizza, quesadillas, sandwiches, ext…the options here are endless. With this carnita recipe, you really can do no wrong! 🙂

The one must? A side of guacamole and chips.

My Favorite Slow Roasted Pork Carnitas.

Classic Slow Roasted On the Stove

  • Toss the cubed pork with the garlic powder and chipotle chili powder. Season liberally with salt and pepper.
  • Heat a large dutch oven over medium high heat. Sear the pork on all sides. If needed, sear the pork in batches if your dutch oven is not large enough. Reduce the heat low and pour in the beer, orange juice and 1/2 cup water (there should be just enough liquid to cover the sides of the meat). Add the bay leaves. Bring the mixture to a boil and then reduce the heat, cover and simmer for 1 1/2 hours on LOW. After 1 1/2 hours the pork should be falling apart. Remove the lid and continue cooking another 30 minutes. The Coca-Cola will caramelize and the liquid will evaporate almost completely.
  • Transfer the pork to a cutting board and shred. Drizzle the carnitas with lime juice. Serve with warm tortillas, avocado and cheese. EAT!

Crockpot

  • Toss the cubed pork with the garlic powder and chipotle chili powder. Season liberally with salt and pepper.
  • Heat a large dutch oven over medium high heat. Sear the pork on all sides. If needed, sear the pork in batches if your dutch oven is not large enough. Transfer the pork to the bowl of your crockpot. Add the beer, orange juice, 1/2 cup water and the bay leaves. Cover and cook on low for 6-8 hours. During the last hour, remove the lid and allow the liquid to evaporate almost completely.
  • Transfer the pork to a cutting board and shred. Serve with warm tortillas, avocado and cheese. EAT!

    I love your idea of dinner party posts! I have always wanted to get more ideas for things like that. Plus I love all your pictures of food and would love to see more pictures of how you serve the food and stuff. And as a fashion blogger, I think seeing some fashion posts would be awesome as well!

  7. Hello! I always enjoy hearing about your life and family!! I would totally be into entertaining posts and dinner party ideas! Also, I don’t know if I’m in the minority here, but I loved the way the blog looked before one recipe in a row, rather than a grid. When I visit the homepage, I feel like it’s sensory overload sometimes. Like each of your pictures is practically a work of art and I would love to see just one big picture with the intro and then the next picture underneath rather than three smaller pictures in a row. But other than that, HBH is my happy place!!

    Also, have you ever thought about having a podcast like a couple cooks? I love theirs!! Also party/event planning sounds so up your ally! I think that would be awesome!!   9. You want to know something amazing? You can do this in a pressure cooker too!!! It’s crazy but I made an almost identical recipe in my pressure cooker for dinner last night….. oh my word crazy amazing! Like I wanted to lick all the utensils amazing AND my hubby with the New England Yankee palette loved them too!!! Now I’m off to heat up the leftovers and make a pot of pressure cooker rice with some lime and cilantro.

    I love your blog and always find some time during the day to read it without ever being bored (This is impressive for me because I don’t always stick with things!). I am in high school and I know that I’ve commented on some of your posts after I make your food. I have been reading for about 1 1/2 years and my family is really into the blog too always asking what your new recipes are and what going on in your life!

    What made me fall in love with this blog (only one I read daily!) is your personality and how young you are. A lot of blogs are written by mom’s and they talk about their kids and stuff and I’m just not at that point in my life yet.

    My advice is don’t overdue it! There are days when your talk about how long it’s been since you’ve had a shower and have good stains on your clothes from days before. I love being busy (on my way to a track meet right now) so I totally get it just don’t burn yourself out.

    As for the blog, I know others have said but behind the scenes posts sound great, more videos (I get a sense of you!), and I would LOVE some fashion posts and I’m sure you would be great at it. 😉

    A change is definitely a good thing and your loyal fans will stick with you through everything. Like others have said people like authentically so don’t be afraid to just be you. Thank you Tieghan for all your hard work!

  12. You know how you have a favorite tv show and love it, but then they start changing the whole premise of the show? It’s because the writers get bored with the same old pattern, but the viewers hooked into the show because of that pattern they loved and then find themselves dismayed that their favorite show is no longer the same. People watch a show for a reason and when they change that reason they stop watching. You don’t realize how many people like the way your blog is already. It is like comfort food for us – you don’t mess with what works. Sure you can add a few fun variations but it has to stay close to the true base or it is no longer the comfort food that we know and like.

    I like the awesome photos, the personalized narration you add of your life and your family (which makes you different from so many cooking blogs that just toss out recipes and that’s it) and of course your amazing creative recipes. I will say I rarely watch videos of you or anyone. But I do often wonder how you come up with your recipes. It would be great if you would add some simple recipes now and then for those of us with limited budgets and time. Maybe a “Simple Saturday” theme recipe day?

    Don’t try to be everything to everyone. You will burn out. To me, fashion and cooking are two separate blogs, but helpful cookware and tools, unique serving dishes, beautiful table linens, herb and veggie gardens, and kitchen design ideas are subjects that interest most cooks. Again, perhaps you could have a set day per week where you provide several links to cooking stuff you love, instead of a recipe that day. It gives you a day off from cooking, writing, and taking pictures, but let’s us drool over kitchen eye candy we might want to have.

    There are so many reasons people don’t comment. Many of us have small devices that require a Masters degree in patience to type on. And many of us are so in awe of your posts we just don’t have anything to add. Please understand that often our silence is merely a compliment to the Chef.

  13. You have no idea how much my blog and I can resonate with your thoughts on your blog. Sometimes you just have this slump where your content seems to look entirely the same! The best that you can do is to find inspiration, and I find so much from your blog already! 😀 Anyways, I remember that you did a pantry tour which was really beautiful because we got a lot of insight on interior design AND what you keep in your kitchen! I think that if you do a fridge tour or a kitchen essentials post, it would be so helpful for those just starting their journey with health and with cooking!

    The inventiveness of your recipes and the incredible rustic presentations/photography basically ensure that you run the best food blog on the internet (in my opinion). I would LOVE to see more behind the scenes work (Whenever I want to organize my kitchen/pantry I go to your Crate and Barrel blog post for motivation :D). Fashion would be awesome and a definite yes to entertaining posts!! Ultimately though, do whatever you feel is going to give you the most satisfying challenge.
