Guys, we have serious, serious things to chat about today.

Number one is obviously these carnitas. These extra special, super delicious slow roasted pork carnitas.

And two? Well two is about what’s been on my mind recently. Let’s start with two, and then we’ll move on to the carnitas. Promise, I will try not to write a novel…

So lately I’ve been I wanting to do more with the blog. I need a little more of a challenge, something new, something different, and I feel like the blog needs a little update. I’d like you to let me know what you’d like to see more of on HBH. Is it super easy recipes? More quick how-to videos? Longer videos… where I talk and talk and talk? Do you like hearing all about my life and what’s happening behind the scenes? Or would you prefer for me to simply stick to content? How about some lifestyle posts? Would you be into fashion inspired posts? If so, what areas? I really want to know what you’d love to see me share? I want to go there, to add something new and fun and fresh and different! So please… give me your thoughts, ideas, comments… I want to hear them all!

PS. the fashion thing?? Anyone? You know my whole life I thought I was going to work in the fashion industry, but then my move to LA happened and I kind of freaked, and then this blog happened. Now I only buy dishes and surfaces, and only wear Lululemon tights and sweatshirts smeared with chocolate all day long…I wouldn’t mind bringing a little fashion back into my world. Would you guys be into it? My favorite trends? My wish list? Maybe some go-to working girl outfits? Maybe only as a monthly thing, or maybe more? Thoughts?!?!

PSS. What about entertaining posts!?! I’m really into these. Like dinner parties, summer get-togethers, cocktails… Would you be interested in seeing more of these types of posts?

OKok, and now let’s chat carnitas!!!

The pork gets slow cooked for two to three hours and when it’s finished, it literally just falls apart. The shredded meat makes for the most epic round of tacos, complete with all the toppings. The meat just melts in your mouth and the flavor is insane.

Like nothing better.

Also, while this meat is great for tacos, it’s also great for burrito bowls, nachos, pizza, quesadillas, sandwiches, ext…the options here are endless. With this carnita recipe, you really can do no wrong! 🙂

The one must? A side of guacamole and chips.

My Favorite Slow Roasted Pork Carnitas.

Cook Time 2 hours
Total Time 2 hours 20 minutes

Classic Slow Roasted On the Stove

  • Toss the cubed pork with the garlic powder and chipotle chili powder. Season liberally with salt and pepper.
  • Heat a large dutch oven over medium high heat. Sear the pork on all sides. If needed, sear the pork in batches if your dutch oven is not large enough. Reduce the heat low and pour in the beer, orange juice and 1/2 cup water (there should be just enough liquid to cover the sides of the meat). Add the bay leaves. Bring the mixture to a boil and then reduce the heat, cover and simmer for 1 1/2 hours on LOW. After 1 1/2 hours the pork should be falling apart. Remove the lid and continue cooking another 30 minutes. The Coca-Cola will caramelize and the liquid will evaporate almost completely.
  • Transfer the pork to a cutting board and shred. Drizzle the carnitas with lime juice. Serve with warm tortillas, avocado and cheese. EAT!

Crockpot

  • Toss the cubed pork with the garlic powder and chipotle chili powder. Season liberally with salt and pepper.
  • Heat a large dutch oven over medium high heat. Sear the pork on all sides. If needed, sear the pork in batches if your dutch oven is not large enough. Transfer the pork to the bowl of your crockpot. Add the beer, orange juice, 1/2 cup water and the bay leaves. Cover and cook on low for 6-8 hours. During the last hour, remove the lid and allow the liquid to evaporate almost completely.
  • Transfer the pork to a cutting board and shred. Serve with warm tortillas, avocado and cheese. EAT!

  1. First of all: YUM. Will definitely be trying these out!

    As far as mixing up the content, I would *love* some “dinner party” type posts! I usually gravitate toward one dish but have trouble rounding out the meal, so it would be great to see how you go about choosing all of the different dishes, what cocktails might go well with it, etc.

    I’m also a total sucker for fashion/lifestyle type blogs, so I think it would be great to mix in some posts along those lines. Maybe how you balance all of this cooking with exercise, what your go-to daily meals are, how you go about decorating/organizing your kitchen, etc. And I’d love to see some fashion posts thrown in there, like seasonal trends, outfits for certain occasions, the core wardrobe pieces you can’t live without, whatever.

    I’ve only commented a few times, but I absolutely love your blog (like, daily in-bed morning obsession) and can honestly say I have NEVER had one of your recipes flop – and usually I get multiple recipe requests when I bring a dish to share with family :). Can I just say how excited I am for the cookbook?! Thank you so much for putting all the time and effort in necessary to make that happen, I know it’s no easy task.

    I love the idea of posting “menus” with an end toward entertaining. I love cooking, but am still experimenting with putting together a mix of dishes that all complement/improve on each other when served together. Also, to include the timing of how to make it all come together would be so helpful! I find that one of the most stressful parts of putting on a meal.

    One more thought – I love hearing about bloggers’ favorite kitchen tools. What would you absolutely spend good money on? What’s the tool you find yourself using over and over again? Favorite size dutch oven? LOVE hearing the answers to all these and more.

    Thanks so much for the beautiful blog! My husband and I both come from big families and totally appreciate the craziness that entails. You always inspire to keep calm and cook on :).

I love your blog but understand how sometimes we need to evolve, I like the idea of having entertainment ideas added as I too love having guests and making them lovely things, brunch has become a regular thing hont hint 🙂 I am sure whatever you do will be amazing, I can’t wait to see what you do

    That being said, I wouldn’t mind seeing some behind the scenes posts or more posts centered around entertaining for different occasions. Your recipe archive allows me to piece together some gorgeous meals, but I would be doubly inspired to see a comprehensive post around a certain entertaining idea. XO

And YES to your lifestyle and fashion posts ideas!   7. Okay, first of all, YAAAAAAAY! Thank you for sharing this recipe! We raised our own pork last year, and I finally have the time now that school is done to start using it in lovely recipes. 😀

    I think I am going to echo some of your other readers, but maybe that is a good thing. I would also love to see some behind-the-scenes of how you develop recipes. I would also love to see more highlighting of the cooking hardware you use, ie. the crockery, implements, cutlery, etc. You have such beautiful and unique items, and I am a kitchen-store maniac. I love your idea of sharing fashion, particularly work fashion for girls on the go, even if you tend to work independently and from home (what I am aiming to do too). I also love the idea of entertaining posts (would LOVE LOVE LOVE to see your take on an afternoon tea [the little tea sandwiches, cakes, etc. omggggg]).

    I am one of the readers that absolutely loves hearing your family and farm stories, so I say keep that up! If you get an overwhelming sense that people only want the recipes, maybe it would make sense to keep track of the lifestyle stories and then every two weeks or so make a specific lifestyle-only post that people could read or not as they like.

    I love everything you do, so more of everything! Woo! 🙂

  8. First, your blog doesn’t miss anything! Love the short stories in every blogpost, but as some others have mentioned, it could be fun to read some post just about what’s happening in you life. It could also be interesting if you looked back at some of your older recipes and showed some other ways they could be served e.g. these carnitas could be serve in a pita bread.

    BUT seriously, nothing is missing!

I’m a new mom and working full time so I love that you have so many dinner options for people to make happen in real life. I also like another commenters suggestion of combo ideas…what you would serve with a dish for drinks, appetizers, etc.

Your angst is part of life! I read recipes for fun! I don’t cook everything but I LOVE to read them and your photography is beautiful! Tieghan, the stories about your family, your goats, your barn and your food are interesting. Write about what you are doing and what is fulfilling to you. I love it all!!

With the number of posts you put out each week and the amount of recipes you’ve had to create and test for your cookbook I would imagine you might be feeling the need to shift gears from food occasionally. I love HBH just as it is. Your consistently unique and delicious recipes and brilliant photography is what keeps me coming back but that doesn’t mean I’m not interested in whatever else you might have up your sleeve. You’ve got to fulfill your creative potential. Test the waters if you’re feeling it.
