I’m all about casseroles this fall season — I love them. I made this one for my family the other night, and everyone agreed it’s a new favorite. And truly, the name says it all: just dump and bake. No extra pots or pans, no extra steps. Completely fuss-free but still incredibly delicious.

It’s the perfect family casserole for this busy time of year. As much as I love cooking elaborate meals, there are so many nights when I have almost no time, but I still want to put something comforting and homemade on the table. Recipes like this make that possible — and honestly, they’re the ones we end up relying on most.

Ingredients

  • salted butter
  • boneless chicken breast or tenders
  • italian seasoning
  • garlic powder
  • onion powder
  • salt, pepper, chili flakes
  • dry short-cut pasta or egg noodles
  • chopped broccoli
  • milk
  • heavy cream
  • cream cheese
  • parmesan cheese
  • mozzarella or provolone cheese

Tools To Use

You’ll need a large oven-safe casserole dish with a lid. No lid? Foil works too! And a mixing bowl. That’s all.

Tip: use scissors to cut the chicken directly into your casserole dish.

Steps

Step 1: Season the chicken

Melt the butter directly in your casserole dish. Add the chicken, season with Italian seasoning, garlic powder, onion powder, salt, pepper + a pinch of chili flakes.

Step 2: Layer with noodles

Scatter the dry noodles and broccoli florets evenly over the seasoned chicken.
Pour water overtop, this will ensure the pasta cooks up perfectly tender as it bakes.

Step 3: Make the Alfredo sauce

This is a quick and easy version of Alfredo sauce, but it’s so delicious.

In a bowl, whisk together the melted cream cheese, milk, heavy cream, and grated Parmesan until smooth. Melting the cream cheese first helps it incorporate seamlessly.
Want even more flavor? Stir in a spoonful of basil pesto — it’s incredible.

Evenly pour the sauce over the noodles and broccoli.

Step 4: Add cheese and bake

Sprinkle a handful of shredded mozzarella or provolone cheese over the top — I love using a mix of both. Then dust lightly with garlic powder. It’s my secret trick for making the top irresistibly flavorful.

Cover the casserole and bake for about 30 minutes, until the chicken is cooked through and the pasta has softened. Remove the cover and bake a few minutes longer to brown the top and get everything bubbling.

Serving

Finish with fresh parsley or basil and an extra sprinkle of Parmesan, if you like.

Instructions

  • 1. Preheat the oven to 425°F.
    2. Melt the butter in a 9×13 inch baking dish with high sides. Add the chicken, 1 tablespoon Italian seasoning, 1 tablespoon garlic powder, onion powder, salt, pepper, and chili flakes.
    3. Arrange the noodles and broccoli over the raw chicken. Pour over 1 1/2 cups of water.
    4. Mix the melted cream cheese with the heavy cream. Whisk in the milk and the parmesan. Add additional Italian seasoning to taste. Evenly pour the cream mix over the noodles and broccoli. Top with cheese. Sprinkle with additional garlic powder. Cover and bake 30 minutes. Remove the lid and bake another 15-20 minutes or until the cheese is browning and the noodles on top are getting crispy.
    5. Top with fresh chopped parsley or basil. Scoop and enjoy!

    This was a bit of a disappointment. After reading the comments, I made some changes. Pre-cooked the pasta, used the pasta water in place of the regular water, put noodles on the bottom and chicken on top, used a combination of fresh and powdered garlic, sprinkled buttered panko breadcrumbs for the last 10 minutes of cooking. My guests liked it, but I don’t think I’ll make it again. It was a bit bland even though I spiced it up.

    I’m not usually one to comment on recipes. We’ve loved nearly everything we’ve made from this website but this one didn’t hit the mark. It was semi edible. Chicken and broccoli were cooked. Pasta on the bottom was okay, but everything on top was crunchy and nearly burned. This is also after I stirred it mid meal. I would possibly consider making it again but only on the stove. The sauce was not sauce, it was thin soup. Would not consider this a dump and take no action meal.

    I thought this turned out really well! My 2 year old loved it. The chicken was moist and the broccoli still had a crunch to it which I prefer. Some things that may have helped make this a success- I only had elbow macaroni on hand so it may account for the noodles cooking through unlike what was mentioned in some other posts. After removing the foil I stirred the mixture and switched my oven to convection setting! I also only had cheddar/colby jack mix so utilized that cheese along with the grated parmesan!     A good recipe doesn’t require basically a complete redo of the entire recipe to make it work. This one is a total failure.

    I have 3 teenagers. Here are their thoughts
    1. It wasn’t as bad as the other ratings, I’d eat it again (girl, 15)
    2. Box Alfredo is better. (Girl, 15 who lives off of Alfredo)
    3. (The boy) why are you asking me. I ate it, didn’t I?
    4. This might taste better tomorrow. Needs to thicken up. I also stirred it and let it cook for another 12 minutes.

    We LOVED this dish. Saw the post earlier today and ran to the store for a few ingredients & made it for dinner. I did adapt, by adding pasta first (bottom) and increasing water a full 2 cups, and used minced garlic as well as the other reviewer. We like sauce, so next time will slightly increase milk & cream. The flavors were great. Will increase the chicken & broccoli as well in future to balance the pasta veg & protein ratio.

    Definitely didn’t work for me. It doesn’t make a thick Alfredo sauce. And you Definitely have to stir up everything mid way baking so the noodle don’t get to crunchy. Not sure if I’ll try again.

    I decided to make this with a few tweaks after reading the reviews. I have found with this site the recipes often don’t seem to work great as written so I always check the comments section, people are good about putting what changes need to be made. I pre cooked the pasta for 6 min until al dente. I skipped the cream cheese because it is just not needed, Cut down the heavy cream to half a cup. I used 2 cloves of fresh garlic instead of powder. Also, I used chicken broth instead of water. I put the pasta on the bottom and covered in the liquid then the broccoli and I put chicken on top. I cooked for 20 min at 400F, uncovered put buttered bread crumbs on top and cooked 10 more minutes until golden. The noodles were done, the chicken was moist and the broccoli not over cooked. I would not follow the recipe as written but with numerous tweaks it was good meal.

    This recipe isn’t great. The chicken and broccoli were over cooked. The pasta towards the bottom was cooked but the noodles on top were not and you could not even eat them. I probably had to toss out half the noodles so there was barely enough left for my family of 4z the sauce also does separate. If you make this out the pasta on the bottom so it is all covered with liquid or precook the pasta.

    Not enough liquid for the pasta to cook in leading to undercooked/uncooked pasta and the sauce was clumpy. This can be modified for a better turn out by pre cooking the pasta and chicken.

  12. I broke one of my own rules, and tried a new recipe for guests. I took this dish to a potluck, and had requests for the recipe. Chicken and pasta cooked perfectly together, and the sauce turned out smooth and creamy. Will definitely do this one again!

    Overall, poor recipe. Being that alfredo sauce is so simple, this recipe overcomplicated things and turned out to be disappointing.
    – Little to no flavor
    – The sauce separated and was clumpy in some places, watery in others
    – Unevenly baked noodles: some completely overcooked, others unbearably crunchy.
