Switching up Thursday nights with these Folded Crispy Buffalo Chicken Wraps. Shredded chicken, buffalo sauce, herbs, lettuce, and a little cheddar cheese, all folded up in wraps, then pan-fried until warm and crispy. These easy wraps come together in minutes, they’re crunchy on the outside, and spicy and cheesy inside. Serve with the most deliciously creamy, jalapeño lime ranch, and additional buffalo sauce. Great for both lunch and dinner, but equally fun for game night too!

Look, I’m not usually one to jump on trends, especially a food trend, but this folded wrap thing that’s going around on TikTok? It’s basically a new form of a quesadilla…and it’s a pretty genius idea. Have you guys seen it? You just take a tortilla, divide up your fillings between the four quarters of the wrap, then fold it all together into a triangle.
Confused? Sorry, that probably makes no sense above, but if you look at my photos below, hopefully, you’ll understand. It is very easy!
Anyway, I’m not really on TikTok, though I probably should be, but when I saw this folded wrap concept, I instantly had the idea to create a buffalo chicken wrap. Instead of hesitating and second-guessing myself (like I always do), I just made a few to see how they might turn out. And you know, not only was it really easy to do, but it was fun. And the buffalo chicken filling sure is delicious.
So I decided I’d create the recipe here for you. Thank you TikTok for inspiring this one!

(the four corners of the wrap)
Aside from TikTok inspiring this recipe, I also drew some inspo from my younger brother, Red. He’s in town all month and he loves any food doused in a little buffalo sauce. Every time he’s here in Colorado, he begs me to make him buffalo cauliflower. It’s one of his favorite dinners.
I’m the biggest sucker when it comes to my brothers and the need to please them whenever they ask for food, especially Red. I just love when they’re excited to have me cook for them!
Since I knew Red would be around, I figured a buffalo chicken wrap was really the only way to go. It was the right move. My family devoured these. My dad said it’s all about the crispy tortillas, the cheese, and the sauces. Altogether…delicious!

(first fold)

(second fold)

(third fold)
First things first, start with the buffalo chicken. I shredded up a couple of chicken breasts and tossed them with homemade buffalo sauce, yogurt (for creaminess), and fresh herbs. Most buffalo chicken dip/fillings are made with cream cheese, but I wanted to make these wraps on the healthier side, so I swapped in yogurt. Worked just perfectly.
Once the filling is mixed, mix up a quick homemade ranch….but don’t make it your average ranch.
I used fresh cilantro and plenty of lime in place of the usual herb mix and stirred in some pickled jalapeños for a spicy, tangy kick. This is the perfect sauce to swirl into each wrap.

I took a lot of photos so you could see how this is done, but guys it’s easy. You make a cut down the center of your tortillas, then add the chicken to one corner, and the greens to another corner, and finally the cheese to another. Fold it all up, then pan-fry.
So you’ve got….
One-quarter of buffalo chicken.
Another quarter wrap of greens n’ things.
A quarter full of ranch.
And finally a quarter full of cheese.
Fold it all up into one triangle.

As the wraps cook, the cheese on the outer layer melts out a bit and the most magical thing happens. The cheese melts onto the skillet and becomes crispy and almost fried. It’s really good.
And then, everything else cooks together into a wrap that’s crispy on the outside, but cheesy and saucy inside.

The verdict? Red said he probably likes these more than buffalo chicken. They’re a mix of two of his favorite foods, buffalo chicken and quesadillas, so naturally, he loved these. As did everyone else. They’re pretty hard to beat.
Nothing fancy, just really delicious food. Excited to have this recipe on hand for an easy dinner. It’s just one of those meals that everyone loves!

Hi!! I think the onion powder and garlic powder measurements to go with the chicken are missing from the top part! 🙂
Hey Jenn,
All of the measurements are correct:) I hope you love the recipe, please let me know if you have any other questions! xTieghan
These look so delicious, I can’t wait to try them. I would love to see your take on a breakfast version of these!
Thanks so much Catherine:) xTieghan
Genius idea….. This can work for so many combos… even a crunchy folded taco. HAven’t made this yet, but will be … very very soon.
Thanks so much Carole! xTieghan
I have to say, I’m a little bit obsessed with these right now. Saw them online and think the idea is fantastic! So many ways to do them. Will definitely be trying this version soon!
Thanks so much Christin! xTieghan
Do you think roasted cauliflower or tofu would be a better substitute for the chicken in this recipe if you were to choose? If you were to choose tofu, which level of firmness would you choose? I am so impressed by your creativity, skill level and maturity for running HBH. Thank you for all you do to show love, kindness and grace in this world. Keep it coming!
Hey Marla,
I think both would be awesome! I hope you love the recipe, let me know if you have any other questions! xTieghan
Ooooh. I was thinking about trying the cruch wrap recipe you posted, but I might go for this one instead. Both look amazing, but this one looks a little less time intensive. Which I need right now haha. Can’t wait to try!
Hey Katie,
I hope you love both of the recipes! xTieghan
Do you think these could be made ahead, frozen, and reheated when ready to eat? Not sure the greens and ranch would hold up!
Hey Amy,
I haven’t tested this, like you said I don’t think the greens would hold up all that well! I hope you love the recipe! xTieghan
I made your crunch wraps last week (swapping out the meat for tofu) and they were such a hit. Definitely making these using beans and salsa instead of meat and buffalo sauce, though tofu would work, too. Thank you!
Hey Lori,
Thanks so much for making the recipe, I am so glad it was enjoyed! xTieghan
This is right up my alley!! Making it tonight!!! You Rock!!
I hope you love the recipe Reem! xTieghan

Hey Susan,
I am so glad you enjoyed the recipe, thanks so much for making it! xTieghan
Does the lettuce get wilted or mushy? Or does it stay pretty crispy? Looks amazing!!!!
Hey Erin,
The lettuce gets a little soft, but still super delicious! I hope you love the recipe, let me know if you have any other questions! xTieghan
I love how you folded this quesadilla/wrap. I did it with buffalo tofu too as well as your recipe with chicken. I love the crunch of the celery and scallions but after trying romaine liked it better without hot, wilted romaine. But will do this wrap again and maybe try refried beans in place of chicken for a veggie variety. Thank you Tieghan for all your work putting together a great website and amazing recipes!! I talk you up to friends and relatives, suggesting they add you to their inbox.

Those wraps looks really awesome and I’m definitely going the make them. Unfortunately Buffalo sauce is not easy obtainable in The Netherlands, so I will have to make it myself. Can you recommend me a recipe for this sauce? I couldn’t find one on your website ?
Hey Saskia,
Here is a recipe that I love:
BUFFALO SAUCE
4 tablespoons salted butter, melted
1/4 cup extra virgin olive oil
½ cup Franks Red Hot Sauce
3/4 teaspoon seasoned salt
1 pinch black pepper
Let me know if you have any other questions! xTieghan
