This simple one pot Creamy Broccoli Cheddar Chipotle Corn Chowder is a new favorite. Made with sweet yellow corn, broccoli, potatoes, and smoky-spicy chipotle chilies. A couple of canned chipotle chilies in adobo are the secret behind this chowder. It’s spicy, creamy, and so delicious. Top each bowl of chowder with the works – crispy homemade bacon bits, cheddar cheese, fresh scallions, and cilantro. Great on its own but even better with a side of homemade beer bread. A cozy weather favorite.

Now that we’re over a week into September, my excitement for fall has really set in. In New York, where I’ve spent the last few days, we went from summer to glimpses of fall, with a few rain-filled days. But then the sunshine broke through, and it’s back to summer again.
The weather is clearly transitioning, and you can feel the excitement in the New York air. Everyone here is ready for fall.
This is the time of year when I love to make summery soups. The nights are cool enough that a hot bowl of soup actually sounds good again. Corn chowder is always a go-to, but another soup I adore this time of year is creamy broccoli cheddar!
As a kid, my mom would occasionally treat my brothers and me to Panera Bread after school. Or occasionally during our lunch break, if we had a morning doctor’s appointment, or something.
It was always a special time when we got to spend time one-on-one with my mom, and I love thinking back to those memories.
Combining an end-of-summer corn chowder with a creamy broccoli cheddar soup just made so much sense. The two recipes are actually very similar, so why not combine them?

Step 1: crisp up the bacon
Crisp up the bacon in a soup pot. I love to dice mine super small to make homemade bacon bits. They’re so yummy on top of the creamy, cheese-filled chowder. You can’t skip these!
Pull the bacon out and save it for topping. I love to get mine nice and crispy!

Step 2: cook the corn, broccoli, and potatoes
To the same pot with the bacon grease, add in the flour and onion. Let the flour in the bacon grease and create a small roux. This will help the soup thicken nicely and the cheese to melt easily into the chowder.
Now add the garlic and let it cook a few minutes. Then add in the potatoes, corn, and broccoli. Season that all up with salt and pepper.
Pour over a couple cups of water and let the vegetables simmer until they’re pretty tender. This only takes about 15 minutes.
Step 3: purée the soup
Next, purée some of the chowder to make it very creamy. I love to leave out a few pieces of corn and broccoli, then purée the rest.
You can make this chowder as creamy and or as chunky as you like!
Step 4: finish the soup
Once the soup is creamy, mix in chopped chipotle chilies in adobo, whole milk, and both regular and spicy cheddar cheese. I know using two types of cheddar feels a little fussy, but trust me, me, the added flavor is worth it! My favorite spicy cheddar is from Whole Foods. It’s called rattlesnake cheddar, I’m obsessed with it.
Let the chowder simmer until it’s thickened and very creamy and the cheese has melted. At this point, the soup will smell so DELICIOUS, and honestly, it will look delicious too.
Step 5: for serving
I served this chowder simply, with a handful of extra cheddar cheese, scallions, and cilantro.
I love to add beer bread on the side for dipping. For me, it’s a chowder must. Every bowl of soup can benefit from a good, yummy slice of warm homemade beer bread. It only has 5 ingredients and and is done in under an hour.
Simple as can be, and every spoonful is so delicious. Think a little spicy, a touch creamy, filled with cheese, and topped with flavorful toppings.

Another recipe with errors, it is almost every recipe on this blog these days. Once in a while in is understandable, but every dang recipe is absurd. Obviously your Mom and you cannot reliably proofread. Hire someone. It is so unprofessional and lazy. It really shows that you no longer care.
No one is asking you to read this blog. Does it make you feel better about yourself to name call? Tieghan does a wonderful job and has so for years. Her recipes inspire us to explore different flavor profiles and techniques. Contact Tieghan directly with your negative comments and leave us out of your personal misery.
not everyone is as accepting of mediocrity (which, i am not sure the proofreading on this blog and her socials meet that low bar) as you are, ann. but beyond the subpar standards you’re willing to accept, the mistakes on the blog have real world consequences – food prices are up and an error in quantity or direction can ruin a recipe (which has happen, based on reviews on some recipes!), a costly proposition. asking HBH to do the bare minimum so her readers don’t waste money and food is not actually that big of an ask.
Is it possible to make this recipe with almond milk instead of whole milk?

Asking for a favor- please consider including ingredients such as the 3 cups of water in the ingredient list. It’s confusing when the directions don’t match the list, especially when it has 3 cups of milk too. I’m not a novice cook by any means, but if I was this omission could be the difference between a success or hot mess. Same holds true about the amount of flour as noted by another comment. I appreciate how hard it is to write clear recipes and directions so I hope you take these comments in the spirit in which they are intended. 🙂

This recipe really intrigued me, however, there is no chicken listed in the ingredients although it appears in the instructions. Did you intend to add chicken to it? And if so, how much? Chicken breast or chicken thighs?

I have tried and loved a number of your recipes but the last year or so it seems like every time I click on a recipe that sounds great, there are mistakes and typos in the ingredients and instructions. Groceries are EXPENSIVE. Please try harder for those of us that can’t waste money on a recipe that isn’t correct.

I understand that mistakes do happen…however they happen in EVERY recipe. Maybe it’s time to not publish a recipe everyday so it can be properly tested and proofread or hire a professional to proofread. I have had a couple recipes of your fail due to these “mistakes”
Believe me, I get that mistakes happen. But this has gotten to be almost every recipe these days. If you and your mom can’t keep up, perhaps consider hiring someone that will do a better job. I haven’t tried a new recipe in several months because every time I go to comments, there are questions about these mistakes. I’m a single mom and can’t afford to trust a recipe that doesn’t work.

Yes, I have paid her by buying her 3 books and visiting her site which she gets paid from the ads. This is her JOB…she’s not doing this as a fun little side to her everyday job. . I would be fired if I made this many mistakes at my job.
Channing, I can see exactly how I paid for this recipe. There are a LOT of ads, both embedded and pop up. Nothing is free. Also, no one asked you. I asked Tieghan to take more care in proofreading. I didn’t ask for your opinion on whether I should have to pay or not pay for a recipe riddled with mistakes. You’re lucky if you have the money to drop on ingredients, I don’t.
Hire someone to proofread for you. This is getting ridiculous. It’s obvious you are copy and pasting directions from your old recipes together. That is why the chicken is in this recipe.

I completely agree. I am always raving about Tieghan’s recipes. They’re always so good that it has got to the point where when I say I want to try a new recipe my husband will ask if it’s hers and get excited when I say yes. Mistakes or not, this is by far the best recipe blog out there.
Sounds great… but not super clear directions? I’m sure the “chicken” thing everybody is mentioning is a typo…
but how do you blend 2/3 of the mixture? Remove 1/3?
And then add the chunky 1/3 back in?

This recipe sounds good to try but after reading the instructions several times I don’t see chicken or flour listed in the ingredients nor the chipotle chilies listed in the instructions. Hope this gets corrected as I think it would be a great fall soup.
