We love these 20 Minute Red Curry Basil Garlic Oil Noodles on the busiest of nights. Homemade basil garlic oil with Thai red curry and frizzled scallions. All tossed with quick-cooking (and delicious) ramen noodles and ready in just about 20 minutes. Not only is this a healthy (vegan) noodle bowl, this dish is delicious for nights you’re craving saucy noodles, but need them to be homemade – and quick.

Lately, my family has been requesting a lot of chicken fried rice or quick stir-fries with a Thai-style sauce. Anything with a little soy and a touch of heat is their favorite. I don’t mind because most of these dishes are pretty quick. But after making chicken fried rice for the third time in one week, I needed a change of pace. 

Since they were still looking for something saucy and soy-based, I went the noodle route. Ever since I made chili oil noodles a few weeks ago, I’ve been into making noodles with an oil-based sauce. 

They’re so easy to do, and always so delicious.

The garlic chili oil noodles recipe I’m sharing today are truly so super simple, but wow, the flavor is so delicious. I really wanted to incorporate some Thai basil flavors and use up all the fresh Thai basil I had in the fridge. 

Thai red curry paste with Thai basil and a few dashes of tamari (gluten-free soy sauce) is one of my favorite combinations. So I thought, “why not toss that up with some noodles?”.

These ended up coming together in just minutes and they really are so delicious.

The details

The oil is the heart of this recipe. The noodles are, of course, important, but it’s really the oil that adds all the flavor. You’ll want to start out by warming together the sesame oil and green onions (or scallions, or shallots…what do you call them ??‍♀️) on the stovetop. Warm until the green onions are super fragrant and frizzled up. 

Basically, you’re frying the onions in the oil, which creates a really wonderful flavor. Once the onions are frizzled up, stir in the Thai red curry paste. Allow the curry paste to cook a minute or so to really intensify the flavors.

At this point, I start adding the garlic, ginger, and chili flakes to a bowl big enough to toss the noodles in. Then add lots of fresh Thai basil as garnish. If your grocery store doesn’t carry Thai basil, regular Italian basil works too. 

When the oil is ready, pour it over the garlic and basil. The heat from the oil will cook the garlic and you’ll immediately smell all the fresh basil.

The rest is simple. Boil the noodles according to package instructions. I love using Brown Rice Ramen (which you can find at Whole Foods and in many grocery stores). These taste just like real deal ramen noodles, but they’re much healthier, gluten-free, and vegan. 

Toss the noodles with the oil and a bit of tamari, then serve them up warm! 

These saucy noodles are currently the go-to favorite. You can even include chicken for added protein. Sautéed vegetables and a fried egg would be delicious additions too!

Instructions

  • 1. In a skillet, cook the sesame oil and green onions over medium heat until very fragrant, 3-5 minutes. Lower the heat, stir in the red curry paste, cook 2 minutes.
    2. in a large bowl, mix the garlic, ginger, basil, cilantro, and season with chili flakes. Pour the hot oil over the herbs.
    3. Cook the noodles according to package directions, then drain. Toss the warm noodles and tamari/soy sauce with the oil.
    4. Serve the noodles with additional green onions.

    Oof, this didn’t turn out quite how I expected. I’ll admit I was a little fast and loose with the ingredients but it’s a no from me, dawg. I used less oil than called for; I eyeballed the herbs and aromatics and probably went a little light on herbs, but that all seemed fine (I like strong garlic and ginger flavor, so that wasn’t an issue); I forgot the red pepper flakes; I used two 3 oz. packets of Top Ramen noodles; I might’ve gone a little heavy with the soy sauce (though still less than 1/3 cup). The flavors were pretty good, but it just tasted really, really, REALLY salty and too oily. I think I’m going to cook some chicken with zero salt to mix in and see if that helps. Short of adding a bunch more plain noodles, it’s the only way I can think to salvage this.

  2. This was the absolute worst meal I’ve cooked in years. Seriously? 1/2 cup of sesame oil poured over herbs and uncooked garlic/ginger? What the hell were you thinking?! I made this recipe and went light on every ingredient you used except for the noodles. And I even left out the soy sauce. And this was still the most assaultive food I’ve had since I was 7 and decided to cook eggs with 1/4 cup of salt.

    DO NOT MAKE THIS RECIPE!!! THIS WEBSITE IS PROBABLY PAYING FOR POSITIVE REVIEWS!!!

    1. There’s no need for this kind of negativity and verbal harassment. If you didn’t like the recipe, you didn’t like it. No need to say fuck you and assault someone with your words. Keep that shit to yourself.

    I made this last night for our family and it was a winner for even the fussiest members ? It has a wonderful flavour with the basil oil and the spicy sauce. Definitely one to make again!

      Absolutely delicious! I followed the recipe pretty much to a t, and it came out great. I used low sodium tamari and subbed a bit of chili sesame oil for an extra kick. For those that complained on the sodium, just use a little less of the tamari/soy sauce (maybe 1/4 cup) and use LOW SODIUM. Also for the oil, just lower to 1/3 cup of sesame oil if you like it less oily (I think the sesame oil does give it great flavor). I also added broccoli, mushrooms, and baked salmon. Overall, it’s so flavorful and a quick meal! I recommend for anyone trying the recipe to add protein/veggies. Love HBH and can’t wait to try the next recipe!

  4. Great recipe. I didn’t even have basil so I used a mixed slaw and it was good. It was a bit salty I may reduce the soy sauce at to my taste.

  5. Oh my. My husband made this dish for supper. We used the Lotus Ramen brown rice noodles. This dish was absolutely to die for. My husband also stir fried tofu in with the noodles. And we like spice and loved the red curry paste. This dish will be made again and again. Thank you for sharing. Always love your recipes.

    Would rate higher than 5 stars!!! My husband and I just finished dinner and I followed this recipe to a tee. I did add a small amount of red pepper sliced very thin and mushrooms because I wanted vegetables. I cooked those separate. When you put this together (so easy) it is just amazing. I can’t wait til next week to have it agin!! I am new to your site and have been strolling through your recipes and am only up to page 11 because I keep opening each recipe to read…and those cocktails….

    OMG, run don’t walk to make this recipe! I followed it to a T except that I went light on the red curry so it wasn’t too spicy for my family. Holy cow, did this recipe deliver. Delicious. This will go in the regular rotation!

      Didn’t love this. Flavor was great but made as the recipe called and thought the amount of oil was way too much. Ended up adding mushrooms and spinach but was still too oily. Would recommend reducing the oil significantly!

    This was delicious. I added some chicken and veggies I had on hand (red cabbage, peppers, and mushrooms all thinly slicked) which I cooked separately and then just added in at the end with the chili oil. It was delicious. I felt the amount of oil was sufficient with the veggies/chicken. I will definitely make this again.

  12. What noodles did you use in the pictures because I’ve used the rice ramen you linked many times and they never have that shape to them after they’re cooked they are straight, the ones you used look like regular wheat ramen noodles?

    Another hit Tieghan! So fast and delicious! I didn’t use as much oil because I am on a lowfat diet, but there was still plenty to coat the noodles in the sauce. I also added some blanched bok choi to make a one bowl meal. So good, thank you!
